I made this the other day.. it was goood... the only thing I found was that it came out thin and runny.. so I added corn starch in a little broth and poured it into the soup to give it a thicker texture.

I agree with the idea to use chicken broth instead of water, maybe split the two, use both. I always prefer soups that were meat broth based over vegetable broth, huge flavor difference

For vegetarians a rich vegi broth and wise seasoning can do the trick quite well, even for their carnivorous guests.

This recipe is very simplified. Remember your mirepoix, use fresh corn if possible, stock is better than water and as always, a little cayenne goes a long way (though I prefer old bay).

I made this soup, but instead of pork bacon I used turkey bacon, and about seven potatoes instead of four, I cook the bacon and then I added the onion to cook before the potatoes, then I added the potatoes to cook for about five minutes then I added two cans of cream of corn and cooked for about five minutes, then I added the water, salt and pepper and cooked for about 40 minutes, then I added the half & half and this soup came out delicious, every time I bring them to work everybody goes crazy about it and they always ask me to bring more.

If you value quality, use fresh corn. Whether canned or fresh, puree half of it. Temper your dairy just before service, don't preheat it.

It's done a lot here, I agree, but they are only shortcuts. Using fresh corn only enhances this recipe. Same with the stupid 'Cream of anything' canned soup variations. You don't need or want, ANY of them.

Cream Style Corn is slightly crushed corn with a thickening agent in it. A substitute would be processing your fresh/frozen corn in a food processor to break it up slightly, and then adding the crushed corn and 1 teaspoon of Corn Starch per cup corn into your recipe. So for this you'll use 3 cups Fresh/Frozen Corn and 3 teaspoons of Corn Starch. Add the corn when you add the potatoes, then add the Corn Starch when you add the warmed milk.

Yes. The type of milk you use shouldn't matter. If it's not thick to your liking just cook it a little longer.

Why would you want to? But reducing is fine, defeats tge purpose though. Another option is to use roasted fresh corn. Puree half of it and add butter or a little bit of cream juat before serving. You'll thank me if you do it right.

No. Shrimp is high in cholesterol but low in fat. You'll need a fat, build a thin rue, then add shrimp (or the more often used crab) late in the simmer. Sounds fun! Let us know whar you come up with.

Oh no no. Try my recipe for the best corn chowder Corn Chowder 1/2 package Bacon 1 Red bell pepper 1 White onion 4 Celery stalks 4 large red potato 2 cans cream corn 2 cans corn 5 Bay leaves Cooked ham (optional) 1 cup 5 c chicken broth 1 c heavy cream 1/4 cup cornstarch Chop bacon into small pieces and fry in a large soup pot When mostly cooked leave about 2-3 tbsp of bacon fat in the pot. Then add cornstarch. Stir for 1 minute. Add chopped onion, bell pepper, and celery to the pot and allow to cook for 2 minutes Add chicken broth, bay leaves, potatoes, all of the corn, and cooked ham. Bring to a boil, cover with a lid and simmer for 30 minutes. Add cream. Simmer for longer for a better flavour. 3/4 tsp cayenne pepper if you like some heat 😄 Trust me ❤

Oh no no...I would never use canned corn in chowder. It's already cooked to begin with.. I cook this dish in July and August when picking fresh sweet corn. We also freeze fresh sweet corn in the summer for winter use. Much more sweet and tender kernels and I can salt to taste.
