Hi, Sarah! Methinks I'll try this as I have yoghurt on my breakfast cereal every morning. I immigrated to NZ from the UK in 1962 and still pronounce Yoghurt the way you do and, so far, the natives have not crucified me. 🙂

Thanks for another great recipe Sarah. First attempt today. Just finished the straining, so is now in my 1 litre pottle in the fridge ready for breakfast tomorrow. Not going back to store brought now, which is getting very expensive Now to decide which of your recipes I will try next !! Your bread recipe is a constant in our house now too

Oh that's awesome! Yeah the yoghurt is so handy - great for making 2 ingredient dough too (sometimes I use the whey for that as well if I'm eating same day as it dries out quicker than using the yoghurt)

@@vickynewman3585 I've never tried it for bread, but yes just replace the water same amounts - I'd be interested to know how that comes out! I often use it for wraps or scones too

So excited to try this. We've just switched to milk powder, primarily because our toddler drinks so much milk (can be almost a liter a day at times!). Apart from that we only use it for baking, tea and coffee. I've always wanted to get into yoghurt making, in addition to straight yoghurt, I also love yoghurt dips in salads, sandwiches and wraps so I'm looking forward to trying different flavor combinations!

How do you know what the expiry would be of the Greek yoghurt you made? Can you freeze greek yoghurt??

To be honest there's no concrete way of knowing, but mine tends to last a week before it starts smelling funny! I've found it doesn't freeze very well, but if I think it's about to turn I sometimes make some 2 ingredient dough (yoghurt with self-raising flour) and freeze it to make pizza bases with 😊

Hi Sarah, just wondering if i want to add vanilla into the greek yoghurt at which point i should add in. Would love to see the way you use up the whey for other recipe too.

Cool thanks for the idea! I've never actually tried adding vanilla so it might require a bit of experimentation, but I'd say add it after the milk has heated and you turn the slowcooker off for it to start cooling down (it might need a bit of sugar too to bring out the sweet vanilla taste?)

Do you have to use whole milk powder . Can you use low fat milk or a plant based milk eg almond milk

I'd guess that it would work with low fat milk but you'd end up with less yoghurt and more whey ... and I have heard of people doing it with coconut milk and having success, but not sure about the likes of almond or oat milk etc.

Not by directly freezing this, but it might work if sugar is added - I haven't tried myself but could be worth looking up a recipe (you've got me thinking now!)

Sarah, what do you think is the ideal length of time to strain the mixture ? The last couple of times it has ended up more like cream cheese than yoghurt !!

To be honest I've never timed it! Although I usually use a glass jug with measurements on the side and let it strain so I have a litre of whey there and it's pretty much the right consistency ... can always add a bit more back in if you went too far lol

No I've made cottage cheese with that powdered milk too and tried doing ricotta with the whey but like you I've failed each time (maybe got a teaspoon out of a liter of whey lol!)

I've actually been experimenting with this a bit lately! I've been mixing my milk powder with water that was previously boiled in the jug to make coffee, so it already started off quite warm and it still seems to turn out well - so my guess is that it doesn't really matter how quickly you heat the milk, just convenient to have it in the slow cooker as it holds the heat really well for when you put the starter in. I also find using the slowcooker you don't really need to wrap it in towels like you would just a pot on the stove to keep the heat while it ferments 👍

My sister bought me one of the stainless steel yoghurt makers, for my birthday last year, and I’ve been doing it in the pot, as per their instructions, but I haven’t had great results, so wondered if it was to do with that. I actually think my milk powder:water ratios might’ve been wrong though, so maybe it was too thin/not enough fat? It takes a lot of focus to stand and watch the pot though lol, so it’s crossed my mind, as to whether it would work the traditional ‘ESIYO’ way and to just sit the jar in hot water. Might have to do more experimentation😊

I think that depends on how well you strain it - if it's still a bit cloudy and has some remnants of the yoghurt in it then it'll only last as long as the yoghurt usually would. I have heard if it's totally clear and you store it in and airtight contain it can last for months (not sure about a year but maybe!). Apparently it also freezes well!

Ah I see where I've gone wrong. I don't heat up my powdered milk mix first.. Just use warm water and put it straight into the yoghurt maker. I wonder if heating it kills any bugs in the milk

I think it does ... an also if you let it get up to 85 degrees celcius it helps to make the end product nice and thick too (although I thought yoghurt makers did this anyway - I could be wrong!)

@@CheaperWaysNZ it does go thick. I find if I use 2 cups of milk powder per litre of water, it goes very thick (with little to no whey). I was also told that adding honey helps feed the culture

I've actually just had to look this up to be sure - lol - apparently it doesn't work well with lactose free milk as there isn't enough for the bacteria to feed on. Although the end product when you make it with standard milk is generally fine for lactose intolerant people as the fermentation process actually removes most of the lactose (I learn new things every day!)

You can get it in rolls from the likes of Mitre 10 in their paint department ... although it does seem to vary what type they have in each time, sometimes it's really loosely woven and lets too much liquid through, but if it does I just double it up and it seems to do the job!

I don't use it with them - I have a wraps recipe that's a bit different/more filling than the tortillas that I add butter and milk to 🙂
