I have a whole leg of lamb waiting to be butchered in the freezer and this looks and sounds amazing! I will be trying this in a couple days thanks to Bridgette, Dan and the ATK staff for making people like me stay inspired and really cook whole foods for my family!!! P.S. I may slather some roasted garlic hummus on the pita before adding the meat mixture...homemade hummus by the way.

That’s what we call in Arab world ‘Hawashi’ you try to search for it, especially the Egyptian version which is amazing

Speaking of lamb, the old way, to dilute the gamey-ness, was to serve lamb with mint jelly. I found, what I like best, with grilled lamb, is Italian salad dressing. Believe it or not. This would probably work well with other gamey meats, too.

I had a similar lamb-stuffed pita at an Indian restaurant earlier this year.... but this looks even better with all the herbs and lemon (and *more* Lamb meat)! Yum! I'll definitely have to try this the next time we grill! 👍

if you're a fan of Dan the man with the lamb and not on the lam, then get off your can, get your tan, use ur right hand, listen to some Cezanne, or Duran Duran, turn off Rosanne, and CSPAN, and watch this Mediterranean plan-------------for a pita meal.

I'm looking for a pita bread recipe from ATC. Mine doesn't bubble whilst cooking. Pan frying pita is so much more appealing than oven baking bread in the oven in this very hot Arizona summer. ❤🌅🌵

Every other recipe says parsley. My chef husband when I showed him I wanted to make this said, make sure you get mint. None of the recipes I can find use mint- just parsley. Is this the common way?

I would think you'd want to cook the stuffed pitas on a rack over a sheet pan. If the pita rested directly on the sheet pan, it would probably get soggy.

He used the wrong spices, completely destroyed the parsley and onions with the food processor, and even chose the wrong pita bread. To do it right, you need to chop the parsley and onions with a knife, use Lebanese 7 spices + salt and FRESH thin (Lebanese) pita bread which you cut into 4 quarters while retaining the side connection so your sandwich doesn't dip liquid fat as you eat it. The reason he couldn't separate his pita bread into 2 is that he didn't get it fresh. On the side, use chopped onions + parsley + sumac to compliment the sandwich.
