Gotta say flipping awesome chili. I made a big batch for an employee pot luck. Had all the sides to go with it. It was the only dish that was completely gone at the end of the meal. Crazy awesome dish and crazy easy to make. I am a true America's Test Kitchen believer. Just so you know I have over 15 years in the restaurant business and I'd put this on the menu anywhere.

I just made this. The gravy is amazing and the beef is very tender. I made this on the stove top and it turned out great. I love how these women explain the science behind the cooking. Tomorrow this will turn into Frito pie, next day chili cheese dogs. I will make this again.

I just made this chili I altered it a bit........in place of water I added 3cups of tomato juice, added a extra can of tomato pieces. Doubled the onion. Other than that it is the same recipe. Excellent recipe, this might be my go too chili. Has a real chili taste and not too hot.

I made this exact recipe and I’ve enjoyed ground beef chili all my life however, this is the best I’ve ever made. Preparing the ground beef with baking soda really makes a difference and the whole Chile’s add amazing flavor. Highly recommend!!!

Shame you didn't edit your spelling: chili and Chile's - next time out shopping, buy a dictionary rather than something for the kitchen ;-) FYI - for those in the UE and especially UK, when they say "ground beef" they are referring to what we call "mince" - just so you know (not that you don't cos you're not thick and don't need stuff explaining to you like some of the others)

I made this exactly as u instructed. I was a bit nervous about making my own chili powder, but everything went really well. And the end result is delicious: tender meat, complex flavour. I am going to let it rest and serve it tomorrow to my family: I read that chili tastes even better the next day. Thank u!

Thanks for this recipe. Just won judges choice at my church's chili cook off. I didn't add beans so I substituted a second can of tomatoes. And I made it a little larger with 3 lbs of beef (2lbs were chili grind, a coarser ground beef). The chili powder was a game changer. I regretted adding 2 Tbs of sugar. Should have tasted and added slower. I sub-ed cayenne powder for chipotle (I'm not a jalapeño fan). And I didn't have an oregano. I also cooked it in the crock pot for 2+ hours (after browning stuff on the stove. And I deglazed the skillet and added that liquid). I did make it the day before the cook-off so it had time to mature. Enjoy your own twist on Texas chili!

I live in a largely Mexican area, and my local grocery store has tons of chiles so I use 3 different types. I use beef bone broth instead of water. I used a leaner 90% beef and black beans. Even with the changes, this recipe is a solid banger, a little spicy (which I like, I doubled the chipotles in adobo) with a ton of flavor and super tender beef. Congrats atk, it’s a winner.

These ladies never disappoint. Ancho guajillo chiles and so many more, were rare to find in American grocery stores. Now, I finding them everywhere and when I can't, there's always Amazon. I just wanted to say thank you for this chili recipe variation! I love chili. All different kinds. With beans, no beans, Hamburger chili, Venison chili, etc.... the list goes on. My house smells incredible. Recipe was very easy to follow. You’re right! Making your own chili powder really makes the difference. I look forward to more of your video’s!!

Be careful on canned beans, the liquid is where most of the salt is. We always rinse the canned beans first. We have sodium issues.

Says an industrial cook/baker, y'all give me the fuel to my creative curiosity. I think I just need to get out of hospital cooking and find a place to grow. I love the science background too, love your cookbooks and how y'all share what didn't work too. Big love from Texas! No one cares if you don't like beans...just don't put them in, damn why does everyone have to be so obnoxious. Do it your way & share it, we all like to hear your twists on recipes. I just use a basic outline of any recipe then add what I know my family loves.

Making this again right now. House smells amazing while it’s in the oven. Going to be my go to Chili recipe from now on, though I may play around with various Chile Pods. Grinding your own powder makes a huge difference. Also I’m trying an addition of 1 tsp of Cinnamon this time.

Thank you for the recipe! My family said it was the best chili we have ever had. Wow the baking soda and tortilla chip make all the difference. I spiced it with more cayenne to bring up the heat level. Wow! Everyone raved about it.

Baking soda also helps prevent the gas most people get from eating chili beans. I add mine at the end, and stir til it no longer foams..... I'll start adding it at the beginning as well.

I add it when I'm soaking dried beans.. Helps with gas but also helps soften the beans and they cook a lil faster

Yeah, I add just a pinch to spaghetti sauce to reduce acidity. Don't overdo it though, more than a pinch and you will taste it, you don't want that.

Thanks for the heads up on long slow cooking! It really improved, tenderized, the second half of my pot of ground moose chili ! (I start with bacon since moose is so lean; use black turtle beans since "some" prefer the texture.) Can't wait to do it with your seasoning - time to go shopping for chilies!

Bagged grocery store chilis are likely stale. Find a carniceria with an open bin of dried chilies, usually near the produce section. You'll get fresher dried chillies.

I've been making chili for way more than 40 years, but not recently. I'm planning to make some soon, and while I will not use this recipe exactly, I will take some ideas from it - specifically, adding tortilla chips to the ancho chilies and adding baking soda to the beef.

I made my chili yesterday. I didn't use enough ancho chilies, left out a few ingredients (chipotle paste? When would I be able to use it up?), and used steak chopped up in a food processor instead of ground beef, but that aside I mostly followed this recipe. It was pretty good stuff.

My paternal grandmother (born (in 1898) and raised in Texas, as was I) used to make chili during the winter months in Lubbock. I didn't think about it until now, but when she made her ground beef chili for the family, she added beans. When she made it for church dinners or other gatherings, she omitted the beans. But she always, always, always baked a pan of cornbread (made with bacon fat) to go along with the chili. I don't have the old chili recipe but I do have the cornbread recipe. I expect this recipe will be very good.

From Texas here as well. I started adding beans to my chili and I believe it makes a difference. Texas likes to stick to tradition when back in the 1800's the chili Queens made chili with beans only served on the side along with rice and flour tortillas to dip into the beans. I prefer chili with the beans because it just makes it more hearty. Going to try this recipe soon with grinding my chilis. I always soaked them and put them in the blender, but their way seems easier. I think this recipe will be a keeper.

After living in Texas for 14 years, I was introduced to beanless chili. I LOVE it. Works for keto, and I use my Texas-grown beef ....mmmmm. Cornbread sounds great (when am off the diet)...or garlic bread. The featured recipe looks yum, so thanks ladies.

I use several types of chiles, ancho, New Mexico red, pasilla and chipotle. But I heat the chiles, then cook them in water, then blend. The corn chips for thickening are an interesting idea. I will try that. Currently, I use refried beans as a thickener.

I'm not sure why they went with the oven over leaving it simmering on the stove top. I've always left my chili simmering over low heat for a few hours on the stove top and it's turned out well.

@@nanoflower1 I've never tried it myself but they say by putting a stew in the oven (after getting it to full heat on the stove top) it will cook much more evenly.

Respect for this recipe! This is not at all what I was expecting when I pressed play! I will be making my own fresh smoked chili powder/masa!. That baking soda tip is great! Love these ladies and appreciate their explanations. I grew up with the sugar added but 2 beans. The longer simmer time does make a better chilli! The avocado, white cheese and lime juice is a nice twist. I'm impressed she used so little salt and waited till the end to add it. These ladies always bring interesting and unique upgrades to "standard" recipes. Love it😍

Just a word of warning when using the Baking Powder trick. I mixed the items (water, salt, baking powder, and ground beef) in what I found out to be an aluminum mixing bowl (not stainless steel) and it gave the ground beef and resulting chili a chemical, metallic taste. The Baking Powder interacted with the aluminum. Make sure your mixing bowl is not aluminum.

Did you actually use baking powder instead of baking soda, which is what the recipe calls for? If so, that may why your meat tasted metallic. Baking soda and baking powder are two very different ingredients that are not interchangeable.

Still haven't brought myself to buy whole chiles, but I've upgraded to using ancho powder in combination with the other spices instead of premade chili powder. I've noticed, even in the ATK best chili powder, Morton and Bassett, it's way too garlic powder forward. It really helps to make your own blend even when not going with dried chiles.

I just made this again for the first time in a year, and my God, I still can't believe how good this is. I'm still only using Ancho powder instead of whole chilis, but I might have to try it soon, because if it's out of this world good with powder, whole chilis would make it out of this solar system good.

@@prm5960 You probably would need to use that much to actually match the amount in the recipe, to be honest. I just use 2 tablespoons. Maybe I should start upping it to at least 3 or 4. And make sure you get good ancho powder. Some of the stuff on Amazon is so light it’s practically paprika. The stuff on spice house isn’t cheap but is very good.

So I made this recipe a few days ago, best beef chili I have ever had, I mean ever! It was great the first night but since there is only two of us, I had plenty of leftovers. Two nights light the leftovers were even better. Flavors had melded but heat was even more intense, not overpowering just better. Can't wait to make this again, very soon.

Made this Sunday afternoon with football on - Delicious, looked exactly like the video, just needed more salt. All I had in the freezer was 90% beef so I switched out 1/2 lb for fattier ground pork. Cooking 2 hours really did make the meat more tender and I was surprised the beans didn't fall apart. As typical for ATK, it's more work than they make it look - lots of dishes for the human dishwasher. Next time I'll invite the guys over.

I made this tonight, but I used chipotle powder instead of regular chipotles. It was delicious. Everyone loved it. It does taste with peppers mainly, but it’s a good level of spice. The beef get flavorful and sooo tender. It looks a little complicated, but it’s easy but a lot of steps.

Sounds and looks amazing! The only thing is I don't eat beef so I use Jenny-O ground turkey (93-7% fat) and I added kidney and garbanzo beans! I love the texture that garbanzo beans give and everyone loves the variation. Making the chili powder is well worth the effort and most of my guests didn't even know that I had used ground turkey. Thank you for sharing this!

I just make Chili today outside on my woodstove! I used my old Betty Crocker recipe, I wish I had looked this recipe by ATK up before I cooked. Darn!I don't know that I would have made my own chili powder, but i like the tip on using baking soda in browning the beef and the other tips! Will definitely try this recipe next time!

The best chili I ever had was served at a party by a Congressman from Mission Texas. They made it in Texas and flew it to Washington DC where the party took place. The chili was made of small, hand cut cubes of venison. Perfectly spiced.

The homemade chili is a labor of love, but definitely worth it. The aroma fills the house, especially when it all goes into the oven. Good winter meal, and fairly cheap if you can get the beef for a good price. Serves about 6, which equates to 3 lunches and 3 dinners, if you are inclined. Definitely need to stock up on seasonings though, especially cumin. It's about 1/2 cup of spices, all together.

I just put mine in the oven. I had to make it my own because I only had new Mexico chilis and had some leftover bell peppers so added that to the onion. Then one 14 oz can of fire roasted diced tomatoes to the food processor and one extra can without processing. Instead of water I used beef broth and I inadvertently used smoked paprika instead of regular. I tasted it before going into the oven and it needed a little salt but it's going to be delicious 😋

I made it. If you use the size pot they have, you could double the recipe in a single pot. Although it's probably a good idea to cook the meat in two halves, then bring all the ground meat together before adding the spices and sauce. It's a pretty substantial amount as it is.

I made this chili to the T and I have one suggestion... brown the beef then add the onions etc. When I added the veggies first the meat couldnt brown and I kept building up fond on the bottom of the pot that would eventually burn before the meat would brown, even using their baking soda trick. eventhough i had that one issue this chili was kept in the fridge and feed my family for 3 days! Very delicious!
