Made this on a dark rainy day and the family loved it. All the flavors were balanced and seasonings spot on. I made the demi-glaze the day before so the assembly was quick and served with some roasted pumpkin. Delicious!

Excellent. Although I would have sautéed the mushrooms, the onions and caramelized the meat. At the end, due to the consistency, it needed some simmering hours. Good recipe!

I agree, I wrote about my experience with demi glace in my blog post. After all these years of "avoiding" to make from scratch, I finally did it, and I'm so glad I did. It's really another level of Hayashi Rice. So worth it. My family always want to eat this. :D

I’m also too lazy to make my own demi glace sauce. Usually i just buy the cube version along w/ hokkaido cream stew sauce & curry sauce. I think watching you making it from scratch, i think i can make the vegan version using porcini mushroom instead of beef and simply cook it longer. Thank you for sharing this recipe, Nami san

Yep, we pour into Omurice (omelette rice), Hambagu (Hamburger steak), make into beef stew, and Hayashi Rice. We love this sauce very much. :)

May I also say not only you make great videos, the way your blog presentation also needs to be given a huge LIKE as well. I just have a question for the broth that is to be used in this recipe. I had a look at your blog, you have a Oxtail Broth recipe but I am not sure whether the broth is "strong" enough for making Hayashi rice or not as Hayashi is a hearty dish (to me at least), so the broth might need to be stronger. Would appreciate if you could provide your take on this. Happy Cooking!

So I tried to make that brown roux. I think I failed. I added 30 gr of flour + 2 tbsp of unsalted butter... in low to medium temp, kept stirring... and waited, and waited. Half an hour later, it was slightly turned into a darker yellow, but never got to be dark chocolate like it was suggested. Not sure what I done wrong. Any hints?

I still use a package too, since it's so convenient, but this homemade one is not comparable level. SO good. Sounds like you like Hayashi Rice too, then you will truly appreciate it. You mean, chicken or other meat? Hmmm... it seems very strange for me to think of other meat options because it's a beef stew. If it's curry, we can use chicken, beef, or seafood... possible. But demi glace sauce usually goes with red meat. I mean, you "can" use other meat, and if you never had this dish before, you don't have a certain expectation, so it's easier to accept other meat I think. Hope I answered to your question. :)

You can totally skip it, it's just a classic ingredient that is usually included but you can skip. :)

Is it the flavor or texture of mushrooms that are disliked? I dislike the texture, but make my own beef/ mushroom stock which has a huge amount of flavor so I can leave out mushrooms in most dishes unless guests want them(and I have to pick them out.) For substitutions, maybe try eggplant or some tofu soaked in broth, but added at the end.
