For those who are wondering: i saw in their website that you can replace the nagaimo with a potato or any starchy vegetable, but i also saw a video where the guy used cornstarch instead to achieve the fluffy texture of the batter, hope this helps 😊💕 happy cooking!

When my daughter and me lived in Japan this was one of our favorite fast foods from a store nearby. I still remember the delicious flavors and wish I could find it here. We live in Takarazuka between Nishinomiya and Osaka. I miss it very much.

I just followed this recipe today and it was absolutely great! Only one thing worth mentioning as maybe others wouldn’t realise either but i didn’t realise how thinly the cabbage should really be chopped. It was still quite crunchy and firm, so next time I’m going to make sure i can find a soft variety and shread very fine

Actually, made this some time ago after visiting Japan, just refreshing my memory :D But the defining ingredients are flour, eggs, baking powder and greens, and the okonomi sauce - which can be simplified to Worcestershire sauce (available worldwide), sugar, soy, and honey. Anything other than that forms the "as you like it" part of okonomiyaki. Which means I can do whatever I want and it's legit 😅 One thing to note is that Japanese style loves this to have very sweet sauces - the okonomi sauce is sweet, and the Japanese mayo is sweeter than Western-style mayo. Apart from that - dig in!!

A friend online told me the name of the dish translates kinda like "fry anything!" so they said you can use most types of veggies or combo thereof instead of the veggies seen here. I've checked around the 'net and noticed it's true; other recipes use carrot, cabbage, zucchini etc. We made it a week ago with some other veg combo and it was fabulous

As long as you have cabbage and oyster sauce you can add whatever you like or have and it will taste like okonomiyaki, i've put on shrimp, beef, sausages, pork, mushrooms, grated carrot or zucchini, red pepper, whatever is in my fridge, and i prepare it without flour, the cabbage just mixed with egg, it's so easy to prepare and always delicious

This is absolutely a correct recipe! I can get the mountain potato and kewpie mayo at Hmart. While I am at it I might get a little dried shrimp because I used to see these used in the restaurant I passed on my way to work. I never tried eating Okonomiyaki because it was young people food. My teenaged daughter loved it then. I felt too old and shy to go into the restaurant. My Japanese wasn’t very good and I had no idea if I would enjoy the taste. Now I can try it and maybe make it for the granddaughter someday of the now grown up and too old teenage daughter!

Ohhh so delicious. I lived a year in Japan back when I was a student 20 years ago and this was my fave thing my Japanese host mother would cook for us. I hadn’t tasted it for years, until I found a small Japanese restaurant in a market in London and they served it. ❤ Everything you make is with such love, I love how much care is taken with all the food. I always thought okonomiyaki was made with daikon I was shocked. I hope I can find some Nagaimo and I can try this at home. I don’t eat meat or dairy nowadays so wonder if I can use flaxseed or aquafaba for the eggs?

I think Nagaimo is the most difficult one that you can’t get on amazon due to fresh produce. However, do check out Asian grocery stores and Mexican grocery stores (they sell this vegetable but different names - in their language).

I just came back from Osaka where I ate this for the very first time. It was simply amazing. It seemed like the pancake was cooked with just the batter (after the fridge in the video), so it was thinner. Then the fillings were piled on top of one of the pancakes and another pancake placed on top of that. Either way, the flavor was simply amazing. Thanks for the video!

I didn't have all the ingredients, so i substituted tapioca starch and potato starch for the nagaimo vegetable which was quite expensive at my market. and i mixed soy sauce, malt vinegar, oyster sauce, and ketchup to make my okonomi sauce since i didn't want to spend money on another bottle of sauce. I used bacon instead of pork belly. It was left overs. It didn't come out as nice as yours , but it was edible. Used regular hellman's mayo instead of japanese mayo. Have i committed any cardinal cooking sins here? Do you think my dish is comparable in taste? i skipped the bonito flakes. and i used dashi miso in place of regular dashi since i didn't have that on hand.

It usually contains other dry stuff, so that you don't have to add dashi, salt, etc.

Thank you, everybody. I agree with Namiko. I check the pre-packaged Okonomiyaki flour that I bought, it has: flour, leavening agent (bicarbonate), sugar, salt, kelp powder and guar gum. Not much that I'd avoid, but in general I, too, like to make food from scratch as much as possible.

Thank you for recipe. I had Okonomiyaki in Hiroshima so it is slightly different. They make it a little flatter and bigger? I'm not sure what they use for Nagaimo but maybe you know the difference. Toppings are the same. Goes good with Beer! We had Japanese man stay at our hotel in Asakusa and made Takoyaki, Okonomiyaki, Tempura. He was originally from Hiroshima and his English was very good. We only have a few Japanese style grocery stores here in Calgary so hard or expensive to get some items. I love Tonkatsu and the sauce. The Worcestershire sauce is different( not like British style) kinda like the Tonkatsu. There is another one called Chuno!
