A tip for people making this is when your syrup has made it to soft Ball stage don't wait like she did unless you really can whip up your egg whites like there's no tomorrow, I used a hand mixer and it took more than 10 minutes but she didnt warn that you can't reheat and that once it's ready it's pretty much go time. So I would recommend doing your egg whites first then pouring it into your mixer. Mine still came out tasty but not as fluffy as I would of wanted. :)

I totally agree with you on this. Mix the 3 egg whites and its co-ingredients in your electric mixer first, because these won't get "overcooked" even when you're setting these aside, so you can start simmering your sugar mixture in the saucepan.

I made this yesterday to put as a topping for a Smore's Cheesecake. It came out perfect. I piped it through an icing bag and used a cooking torch to brown the top a little. Thank you Gemma! By the way, it taste awesome warm. I can see it going on top of some hot chocolate.

I have a potentially very silly question: If you're not allowed to put a spoon or spatula in to the mix at all, why are you allowed to put the thermometer in? What is it about the thermometer that won't crack the mixture, when the spatula would?

Because she puts the thermometer before it starts to simmer and she doesn't stir with it. It's completely stationary. If she would keep moving the thermometer around it would crack the mixture.

The corn syrup is easily replicated with sugar syrup, which is taken to the soft ball stage. cream of tartar is an acid, in baking terms. it is a bi-product of wine production. Lemon juice will replicate this. If you are an experienced baker you will be able to do this, if not you will need to learn each separate stage first. Do a little research online, i intend to cover this in basics soon enough. :)

If I'm not mistaken, you can replace it with a bit of lemon juice. Under the assumption that Gemma's making caramel in the first step, the corn syrup is basically there to prevent sugar crystals from forming. A bit of lemon juice (to lower the pH of the caramel) does just that. That being said, corn syrup will give you more of a shiny, glossy texture compared to corn syrup so keep that in mind. I've never made these cause I don't have a mixer so idk whether it'll affect the end product.

Golden syrup or Glucose syrup would work instead of corn syrup but just know golden syrup it will turn your fluff a darker color. It won't come out white. I put a link on my website of where you can buy corn syrup. Honey or apple maple syrup will not work as a substitute.

This is not true Emily, eggs in most places are perfectly safe, we do not even think about this here in the US, where eggs are certified as fresh :)

It won't cook the eggs because the eggs were beaten up. And it's safe to eat raw eggs.

I found a recipe for oatmeal pie (faux pecan pie) and believe this will make a most amazing topping for it. The taste should remind at least US citizens in the South of Little Debbie oatmeal creme pies (a soft cookie, actually). Thanks Gemma. I love coming here for recipes. Woo Hoo!

Hey Gemma! Thank you for this recipe! I once made marshmallow fluff, but I made my own syrup out of sugar and water. It took quite a few minutes, but the fluff turned out very well and was delicious! I didn't know that you actually needed corn syrup for it. And I think, you can't get it in Austria in any case. And ordering online is not very cheap.
