I tried this and used to make New York cheesecake after blended it smooth, the cheesecake turned out perfectly and super creamy and richy. So nice! 3 liter of milk can make around 560 g. Of cream cheese and very cost sufficient for Southeast Asia country (which cream and cheese are mostly imported) like me. More delicious than many stores brought cream cheese!

Its not...theres a difference between cottage cheese (paneer) and cream cheese. Cream cheese is made with heavy cream and milk so that theres high fat content. The recipe shown here is very low in fat content and wont have the original creaminess

It's not the same. You don't whip ricotta cheese AKA paneer cheese. It's made with 3 cups and one cup of heavy cream . And It needs to hang in the cheesecloth for at least 2 hours. That process gives it a much different flavor and texture.

Soooo good. My little man and I enjoyed making the cream cheese and with the whey I made a smoothie for him as it was surprisingly sweet and you couldn’t tell that it included lemon juice. Even thought we can buy a great variety of cream cheese here in Germany we will go on making our own. Many thank for the recipe and your great instructions as always. Hope you and the little unborn are doing great. All the best for the birth and enjoy the time with your newborn, this is such a mariculture time.

Cream cheese is uncommon here in South America, Ecuador. Once in a while I can find it in stores but they are priced for gringos and are VERY expensive. Now I can make my own. I've tried your recipe and it turned out perfect. When I put it into the food processor I added salt, some fresh dill and couple of tbsp of heavy cream. I do it with home made yogurt in place of lemon juice.The same procedure first boil milk and here I use low fat milk for health reasons.If you a cup of yogurt start with boiling 4 cups of milk.You won't be getting lemony paneer and whey.

Adi Xoxo paneer is an Indian name for cottage cheese or say cream cheese.You can drain whey in a sieve similarly and keep in a fridge still in the sieve for an hour to make small cubes out of it .Use as a tofu or make famous palak(spinach) paneer.

I want to clarify something here. Many people living in different countries dont have access to cream. If they dont have cream or its too expensive then how will they get cream cheese? People keep asking gemma to show alternatives and she showed her best recipe. So instead of complaining so much just make it in a small batch and see how it turns out.

One suggestion to get a smooth consistency is to put the curd into gauge cloth to drain the liquid transfer it to new gauge cloth tie tightly in a bowl then lock it tightly to avoid transfer of smell and leave overnight or two days in refrigerator

Paneer is another name for "cheese". In another country it might be called something else but if it's made like this then you should feel free to use it in all your cooking/baking needs that call for cream cheese.

@@dragndorf9 depends on what you are making. I made Oreo cheesecake using that chenna so I blended it with the cream of Oreos and other ingredients. I didn't knead it So it was exactly the same. And cream cheese is used to make cheesecake. So the process of both is same to make the same thing

I’ve tried making this and its really amazing. I love the flavor of it. I thought i like this better than the available cream cheese commercially. Just an advice the longer you drain it the thicker it gets so if you want a vey thick cream cheese then drain it like for an hour or more, if not then drain it for about 30mins only. Traditionally it was known as Farmer’s Cheese, Fresh Cheese and in other cultures other names. It is the way all cheese starts, though what changes it is how it is cultured and the level of fat in the milk. Cream cheese made with cream and milk will be easier to cream too as the fat level goes up. Ricotta is made with what remains of the curd in the whey, or very low-fat milk. If you overstrain it will be dry and more tricky to cream. If you add back a little of the whey it will cream better for you. Paneer is a type of cream cheese too.

Debolina Kundu I think this is just a quick way to make it for recipes for her viewers who can't find cream cheese. Paneer is made exactly this way. Except it isn't blended, it's set and cut into cubes.

LOL... I remember trying to find cream cheese in Mexico and all the store owners thought I was crazy...I had looked up the appropriate phrase online... still nothing... Apparently in Mexico- at least the area that I was in- they call it by the brand name Philadelphia! #mindblown

Here in India... Cottage cheese is very very easily available So acc. To Ur recipe - v just need to get cottage cheese from the shop & then just blend it to a paste That's so easy... Thanks for sharing ❤️❤️❤️

i use a blender, personally. works just fine for me, then I obtain smooth cheese. its just a tad difficult to clean; that'll depend on the blender you have. Works just fine for me! :)

Thats curd is what we use for making cottage cheese and rinse whole water , dry and wrap in muslin cloth and shape it to make cottage cheese

Pour some cream in a bowl, take a whisk and beat it until it is whipped

If by whipping cream you mean the kind you buy from the store fridge, then you can buy regular cream (the one that comes in boxes and is not refrigerated) and leave in the fridge for at least 12 hours before using. When you want to whip it, add a little sugar and a little lemon juice and whip it, it will work just fine (if you don't add sugar and/or lemon juice it will take longer to whip until soft peaks form)

Try searching for recipes on coconut whipped cream. Not sure where you live, but if a can of full fat coconut milk costs less than the real dairy stuff, then this might be what you're looking for.

Excellent recipe! I made the mistake of draining my cheese too much and the cheese turned out pretty dry the previous times. This time, I noticed that she didn't drain by hand and the cheese came out fantastic!

Would this work with non-dairy milk, too? Perhaps by mixing soy milk and soy cream to ensure it has enough fat?

I was gonna ask the same thing(without the soy cream part, although it does sound like a good idea). About the not curdling, you can make buttermilk with non-dairy milk and vinegar and it separates just fine. So I am wondering if this recipe will work too with non-dairy milk.

I was in the store and a gallon of milk is $5.00. A brick of cream cheese is $1.84. Using four cups of milk to make one cup of cream cheese isn't worth the price. I understand wanting to make it yourself, or not being able to get cream cheese! That being said, if i did do it i know this recipe would work fantastically! I have made many of gemma's recipes and they never disappoint! Plus thensound of her voice is beautiful and soothing!

Hii! First of all thank you so much for all your great recipes, and more so for these basic ones! I, like a few other commenters here, do get cream cheese in my country but it's veryyy expensive, especially when you need like 4 blocks for 1 cheesecake. I never knew I could make it at home until I came across this! I got my milk and made this recipe, (I trippled it to get 3 blocks, hence 3/4 of the cheese needed for most recipes. Thought it would be a good enough qauntity for a first try). I followed your steps and here's how the experience went. Cream cheese was easy enough to make. It didn't taste exaaactly like the store bought which is understandable obviously, I needed to use it in a cheesecake anyway so I imagined it would taste fine mixed with all other ingredients. Now since the cheesecake recipe I tried out was a first for me itself, I can't be too sure which of these things is at fault. There were a few things I noticed I didnt like as much and hope to counter in the next time I make it. I was hoping you could help me out the best you can. 1) The cream cheese I made wasn't too creamy even after I blended it with it's separated liquid. What I think I should do is blend it a little longer the next time, plus also try blending it with more liquid or cream this time (as you suggested in your video). 2) The end result cheesecake wasn't as creamy and soft as I'd have liked it to be (as it was in the recipe video). Now that could be because of the grittiness in the cream cheese as I mentioned, plus since I 3/4ed the recipe, I may not have gotten a good estimate about baking time, maybe I overbaked it (which I think I did by 5-10 mins). Also maybe I should omit the flour from the cheesecake recipe; it's only 3-4 tbsp but it'll maybe let it be creamier that way? By telling you all this I do not intend to leave this as a "bad review" at all, I'm actually quite relieved to have found this, and I'm just determined to get it right. I'm requesting you to please help me figure out these tiny things so I can get a good creamy cheesecake in the end. It might take a few tries but I feel I can get there. For the love of cheesecake! Really hoping to see your reply!😊

This curd is chhena in Hindi and if it is pressed then the hard curd becomes paneer and if you grind paneer with clarified ghee or butter it becomes cream cheese or cheese spread you can add salt and black pepper or black salt or capscicum chilly seeds or peprika or oregano chives parsley whatever.......it is yummy

I tried to make this with two cups of full cream milk. I realized I needed 1 tablespoon of vinegar for the curds to form. They looked exactly like the one you showed. However, when I tried to blend it in the blender, it was not blending and instead becoming crumbs (of curd aka cottage cheese), so I added a little water (the drained one), it was still the same and did not blend. I don't understand why it did not blend into a cream and instead remained curd. It would be helpful if you could explain why that happened.

@Nishat. Probably around a minute or 2. I literally just kept going. I also didn’t use a cheese cloth (used those blue kitchen cloths) and didn’t press on the cheese to drain it so mine might have had more fluid.

I made this! I used white vinegar instead of lemon. I have to say the difference in taste from store bought and this is huge! It tastes so much better and it was incredibly easy! My only problem is that you do have to use a lot of milk. 4 cups yielded only a 1/4 cup of cream cheese. I'd go ahead and use a whole gallon if it was going to turn soon, or if I wanted to show off and make something special, otherwise it would be more cost effective to just buy it.

Thank you for sharing this. One recipe should yield at least a cup of cream cheese. You need to use whole milk with full fat content. It should also not be ultra pasteurized as the heating process denatures the milk - it will not yield a generous amount of curds. Hope this helps.
