I just can't understand why my marshmallows didn't fluff at all! :( My son has been behind me to make some.. it was such a disaster! It turned out to be wet! It didn't get fluffy and white though my stand mixer whisked it on high for 30mins. I am vegetarian soni used vegetarian gelatin 5 tsps for 1 cup of sugar. I don't have candy thermometer but my syrup did reach the consistency of a soft ball when I tested by putting a bit in cold water. It formed into a play type soft ball which would take any shape/form. I just can't figure out where I failed or gone wrong?! I did all the steps you mentioned in your recipe Gemma but felt so bad I can't get it for my son. All store bought marshmallows have beef gelatin which is why wanted toake it at home for my son gets enticed to chewing and eating it seeing other kids. This is the second time I have failed!

Hi Gemma. Earlier this evening(It's 23:36 right now in Taiwan) I just got my wisdom tooth removed,so right now I can't eat anything,also my wound is in such pain due to the removal. My nephew is out of school for the holidays, and I do monthly activities and kids hands on cooking activities with him. I haven't got grocery here yet. my niece puts my order in my choice of stores ,and they deliver my grocery to our home, I just ordered a bag of powder geliin from Amazon. and he's making granola bars, with marshmallows and rice Krispy cereal. In the US you can easily find arrowroot powder and potato starch at health food stores and even some normal grocery stores, like Kroger. Maybe those could be substituted for cornstarch? I use potato starch for almost everything that calls for cornstarch without issue.

thank you for showing how to use alternatives for gelatin! May I ask is there any way to make mashmallows (in general) less sweet? I find that even adding cocoa powder, they are still too sweet for our family's taste. (I know marshmallows are sweet, that's why I'm trying to make them myself to see if I can decrease the amount of sugar). Thanks in advance!

Can you use powdered sugar to coat the pan and the top of the marshmallows? Or will it make them too sweet

I’m just curious before starting my marshmallows, does the moisture in the air affect the way I make these? It’s been pretty damp up here lately and I wanted to see if I need to add extra syrup or any other stabilizing ingredients. Cheers from Irish Jilli

hey, gemma! is a stand mixer compulsory for making marshmallow?? or can i use my hand mixer?

You can! It's just way easier to use the stand mixer, as you have to mix for more than 10 minutes.

Unfortunately yes, you'll need a stand mixer. I just don't see getting the same results with a hand mixer. :(

Hi Gemma, can glucose syrup be used instead of corn syrup?

Yes you can use glucose syrup in making marshmallows, in place of corn syrup. Without it, the sugar will crystallize.

Hi. I really like your channel and website! I am trying to make strawberry cheesecake flavored marshmallows. I've seen recipes that do this by using vanilla custard flavoring. However, this is not available where I live. I am trying to recreate the cheesecake flavor in the marshmallow base from scratch without using any liquid dairy. Do you think that butter extract, vanilla extract, milk powder and some lemon juice would do it? Actually the only thing I'd be missing would be the egg flavor doing it this way in terms of a homemade vanilla custard taste. Or would you do it differently?
