This is a great example of the rule “Good, fast, or cheap: pick two.” In the past I’ve always gone for fast and cheap with home cooking, but Frankie, you’ve inspired me. Also the fact that I’m out of boxed pasta is good motivation. I will attempt this and report back!

From an Italian, just a small suggestion and and a couple of corrections: first you put olive oil into the pan, and then the anchovies, then again garlic but do not cut it into pieces, as you will need to remove it once it is roasted and it gave its flavour to the base. also do not add any butter in the end! you can simply add a drop of nice olive oil if you want to feel the the greasy taste

I was taught by my Mom to peel asparagus as well then barely steam or oven roast so they are crunchy and delish. delish. I’ll have to try the peeling the rabe as well!

What is the broccoli you're using? ... I'm not sure I've seen that in the UK, although it must be somewhere!

It's called broccoli rabe. It's a little bit bitter than broccoli, but if you can't find it use broccoli instead.

It's pretty common in southern Italy, but it's not anywhere else. Romano broccoli will give you a nice and proper condiment, too, if you cook it the same way.

Lee Randell what you’ll see in the UK is generally a purple version of that by the name ‘Purple Sprouting Broccoli’, you’ll also see ‘tenderstem broccoli’ which is similar but without leaves on the stems. Occasionally you will see just ‘sprouting broccoli’ which looks to be the same thing he is using, but purple is much more common.

The concept of 'quanto basta' is absolutely infuriating in the context of it being an answer to a question because it gives no useful information. It doesn't even give you a general range to shoot for or tell you that you're looking for a point of equilibrium between moisture and flour and possibly fats. From a learning perspective, it's arguably worse than not having someone to ask questions of at all. It's like asking 'how do I do this math problem' and getting the response 'you put down the correct answer' while ignoring that you weren't asking about the answer, you're trying to learn the process. Frankie, at least, is more helpful than an Italian grandma... but let's not celebrate how unhelpful Italian grandmas apparently are.
