Ingredients:
[2 servings]
✨1c Flour
✨2 Large Eggs
✨1/2 tsp Salt
For flour, I use Anna Tipo ‘00’ which is extra fine, and gives your dough a silky, smooth texture, but you can substitute All purpose if you can’t find ‘00’
Tips:
Serving size 〰️ 1 egg per person
Dough Consistency if dependent on: egg size, humidity, location, etc.
If Dough is too wet, add flour; too dry, add water/evoo
Continue adding flour to your dough mixture if it starts getting sticky, sometimes I need to stop the machine & add, move the dough around a bit & begin kneading with the machine. Should come together in 5-8 mins of kneading with the KitchenAid.
Cover and let sit for 30 mins to 1hr and you are ready to flatten & cut with your pasta attachment 🌟

I sometimes make my own homemade pasta. The texture and taste are better than the pasta you get in stores. When I make chicken noodle soup I always make the pasta myself because it makes the soup so much better.

Scooping like that packs the flour which gives you an incorrect measurement.

Welcome to making pasta, where you make it based on the feel of the dough ball and adjust from there. Is your dough too dry? Add a tablespoon/10ml of water and mix. Repeat until the correct consistency. Dough too wet? Add a pinch or two of flour. Regular baking is nit picky about scooped cups. Pasta dough isnt

You don't add salt to pasta. And you should sieve the flour first.
