I made pasta last week and froze it for Christmas Eve. 6 dozen ravioli and 3 pounds of spaghetti. My ratio is similar. 600 g flour, 360 g wet ingredients, 4 whole eggs, 6 yolks, and water to reach the correct weight. Making more tomorrow.

As for drying, let the pasta you can leave noodles on a drying rack (or coiled into small nest) for 12-24 hours to dry and store in an air-tight container. I hope this helps, happy pasta making!

We love making pasta at home with our KA and rollers. The only thing different we do is rarely ever go down to level 8. By about 5 or 6 its thick enough for most spaghetti (for our tastes) and we prefer thicker pasta for fettuchini and lasagna. Great Video!

Great presentation, when I was growing up a friends mother made fresh pasta which was wonderful beyond words. When she composed her dough she used mostly egg yolks, or more egg yolks than whole eggs. She made a large batch then after resting the dough we used a crank pasta roller as you did with your KitchenAid attatchment before putting it through the cutter. After drying the pasta for an hour or two she boiled it for a minute or two, after draining she topped it with a mixture of melted butter with crumbled saltine crackers. I have never had any pasta ever which was as wonderful as hers ever, have you ever seen such a recipe for the pasta dough of using more egg yolks than whole eggs? If so could you provide me with it? I was only 13 years old, this was 1970. She was a German lady.

The egg to flour ratio is perfect. I weigh the eggs first then weigh out 1.5 times that in flour. If I have four eggs that weigh 200 grams, then I weigh out 300 grams of flour. A little salt and baking powder doesn't hurt either. One day, I'll get my hands on 00 flour.

That's a way better way to think about it! I'm watching going "ok how am I gonna measure out 6 ounces of eggs, do I take out the whites or the yolk to get to the 6 ounces if I'm over?! What do I do?!" But if you just go 2/3 ratio method and measure the eggs first, you'll get the perfect about of flour needed. Excited to try it out. Ordered the pasta set today.

Pasta thickness is a matter of taste but dough rolled up to the 8th setting seems to be rather thin for spaghettis. From here, this pasta looks more like vermicelli.

Hi Chef, I have a question to ask here about the kitchenaid. I just got a new one with 300 watts of power I think, the model is the artisan one. I have doubts about the maximum quantity of dough that I can make at a time, I always get the impression is that the mixer is making too much effort, even respecting the maximum quantities that they say on the manual(1kg white flour) Last time I even saw some smoke coming out of the machine using 750 grams of flour and 8 eggs Help me not to break my machine please. Jennifer, I washed mine under running water with a little bit of dish soap before and after using it. It does come with a small cleaning brush to get flour and dough out of the roller. NEVER get these wet. Just use cleaning brush and wipe with a clean cloth. If there are bits stuck in the cutters use a toothpick to get them out.

I have a question chef. I know everyone has different ways and recipes to make pasta, but I notice you didn't add olive oil. Aromero, you can add many liquids to pasta like olive oil, water, even squid ink - as long as the ratio stays similar to a base recipe and the flour is hydrated correctly (not too much liquid, but not too little). I'd recommend doing a quarter portion at a time because it is easier to handle - a quarter portion can roll out over 4ft! When the pasta sheet gets that long, it can get difficult to run the sheet through the roller perfectly straight - shorter pieces are easier to manage in my opinion. Now, you don't have to cut down that long sheet if you do not wish - you can make 4ft long noodles if you want :) Hope this helps! -Chef Austin 👨🍳

I've been wanting a stand mixer. When googling for one, I get a LOT of results for refurbished KitchenAid mixers, and they're still quite expensive for me, personally. Though I'm still considering buying one. I can't help but wonder why there are so many for sale that are refurbished. I wonder what commonly goes out on them. If it's the nylon gear, that wouldn't be a huge problem, since you can find and order a replacement for fairly cheap. But if there are other common defects, like the motor burning out, it wouldn't be wise for me to purchase it, considering that the mixer alone would already be breaking my wallet. And I don't think the refurbished has any kind of warranty either.. So it seems like a risky purchase choice for me. Tough decision.

Michelle, fresh pasta only takes a few minutes to cook! This recipe can take 5-8 minutes depending on how much you cook at once. You can always (carefully!) taste test a noodle for doneness :)

I use half semolina half A.P. flour adjust to taste and keep notes so next time you make you don't have to look up recipe again.

What the heck is 00 pasta flour? I searched target and google and nothing 00 came up, just regular all purpose flour

The best quality pasta we believe is made from 00 flour, sometimes called “double O flour”. 00 flour has is a very fine grind and has a smaller amount of the bran (if any) from the whole grain used compared to other types of flour. This makes for a more silky texture pasta, very delicate, soft to the bite. All-purpose flour can be used to substitute, it will produce a quality pasta with a stronger texture with a bit more chew.
