Angie, thank you for your amazing instructional video. I am wondering what you use to make them seal like that, though. I didn't see you use any sort of "glue" (such as filling, or a sticky syrup, for example). So what is the trick to getting them to seal like they do? Many thanks. I want to make these and have saved your recipe.

Hi Lisa, thanks for your comment. I don't use anything special but I only cook them on one side (as opposed to pancakes which you'd flip at some point) and this allows them to remain somewhat sticky so you can seal them. It's important that you don't get anything on the areas that you want to stick together otherwise they won't stick well. I hope this helps!

you can eliminate it or use about a 1/4 tsp vanilla extract

Ive naver had one of these. I wanna try it. Yours look dslicious. From what ive seen in other places, they fry it and dip it in syrup. What about doing that?

The ones you fry and dip and syrup have to be sealed completely otherwise the cream will fall out. And alternatively, you can stuff them with crushed walnuts, orange blossom water, and a little bit of sugar (and cinnamon if you like it).

Why when I make this my atayef they never turn out golden brown from the bottom. they always stay white even though they are cooked all the way. Did I miss something?

Orange blossom is preferred. Rose water will change the taste drastically.
