Pineapple sorbet is the most common ice dessert you can find in my country Chile, and a key ingredient for Terremoto, the typical independence day boozy drink. we're about to start our independe celebration season living in canada and you can't find pineapple sorbet anywhere here! But now I'm sure I'll steal the show. The recipe worked perfectly! Also, another version that worked even better (I tried 2 recipes at the same time) is to make an egg white + sugar meringe, and blend frozen fruit + water separately, and then incorporate everything together and freeze. the texture is amazing.
