This recipe brings back good memories of my mom making this at home. She also used to make it in salad form without the rice, just collard greens and bacon. So good. 🙂

Hi, Andrea! It looks like I made the black eyed peas, cornbread, and collard greens this year while you made the Hoppin' John. Great minds think alike! I think that using frozen collards would make this recipe super easy. I also think that turning off the heat at the end so that the peas and greens can soften in the steam was a good idea, too. That looks incredibly delicious. Thanks for sharing!

This looks tasty. In my Granny's house on New Year's Day it was always plain black eyed peas for good luck and cabbage for good finances. Hoppin' John looks a lot more friendly. Thanks and Happy New Year!
