Hi, Andrea! It looks like I made the black eyed peas, cornbread, and collard greens this year while you made the Hoppin' John. Great minds think alike! I think that using frozen collards would make this recipe super easy. I also think that turning off the heat at the end so that the peas and greens can soften in the steam was a good idea, too.
