This recipe brings back good memories of my mom making this at home. She also used to make it in salad form without the rice, just collard greens and bacon. So good. 🙂

Hi, Andrea! It looks like I made the black eyed peas, cornbread, and collard greens this year while you made the Hoppin' John. Great minds think alike! I think that using frozen collards would make this recipe super easy. I also think that turning off the heat at the end so that the peas and greens can soften in the steam was a good idea, too. That looks incredibly delicious. Thanks for sharing!

Hi Parnell! Yes, great minds do think alike. You definitely did a lot more cooking than I did though. I took the easy way out, lol! Softening those greens and peas is essential. I know some people prefer firm peas, but I do like mine a little softer. Thanks so much for watching! ~Andrea

This looks tasty. In my Granny's house on New Year's Day it was always plain black eyed peas for good luck and cabbage for good finances. Hoppin' John looks a lot more friendly. Thanks and Happy New Year!

It was always plain black-eyed peas for us and collard greens. I love cabbage too, so that sounds good to me. This is definitely a quick and easy one skillet meal. I hope you like it if you decide to try it out. Thanks for watching and Happy New Year! ~Andrea
