I know this is old, but I just wanted to say look into making sugar from dried dates. I've been learning how to make good sugar substitutes as I learn how to eat healthier and cook/make my own foods.

Great video 👍 I too feel terrible using my honey sometimes. Another great resource for low sugar recipes is through pamona's pectin.

Good for you, excellent, I have been using honey for decates instead of sugar or pectin. Honey you do not need pectin. My jams last for a few years. I make Aronia, Saskatoon berry etc etc.

thanks for the video! since not water bath canning, does the jam last as long on the shelf or does it need to be consumed sooner?

I’m still pulling it off the shelf from last year and it’s all been great! The canning lid is just as hard to pull off as jars that have been water bathed.

How long did you cook the mixture for and how did u tell when it was done please

There isn’t really a set time and it will vary based on several variables. You want to watch it. Throw a few spoons in the freezer. When you think it’s starting to set up, quickly dip the cold spoon into the jam. If it sticks to the spoon it has set up and is ready. If it slides right off, you need to cook longer.

The powder is just a low sugar pectin. It’s the thickening agent that you need to make jam.

I am in total agreement with you and the sugar. I grow some strawberries and I look for ways to preserve them every year, but I just end up freezing them because everything has too much sugar in it. Instead of making a jam, can I preserve whole strawberries like this and what would the process be?

I would think you could can them just like you would do with grapes. You would need a water or juice base. I’m sure someone has instructions out there but I don’t see why it wouldn’t work.

You could use something like Pamona Pectin or low sugar pectin but if you go without it won’t thicken and set up. You will have really runny jam. I have tried it with lemon juice because some say it works but I didn’t have good luck with it. The consistency was more similar to a ice cream topping … which is tasty, just not practical for putting on a piece of bread.

@@ThisOhioFarmhouse Yes thats exactly what happened to my strawberry jam. Ice cream topping consistency. Raspberry jam worked fine without added pectin though :D

Hi! I’m making Roselle jam . You think honey would work ? And it’s not clear .. are you cooking the honey ? Wouldn’t that damage the honey ? Thanks I’m advance. 😊

I haven’t ever made roselle jam, so I’m not sure on that. Cooking the honey too hot can lessen some of the nutritional value, but it’s not damaged…still far healthier than conventional sugar

@@ThisOhioFarmhouse I googled it and found lots of info on cooking with honey. This is one of the research I found: "According to the National Center for Biotechnology (NCBI), heating honey is contraindicated as it causes adverse effects. Cooking it deteriorates the quality and loses its essential enzymes and nutrients. Heated honey can actually produce delirious effects in the body and can be fatal at the same time.When honey is heated or cooked, the sugar and fructose in the honey change their chemical composition as a result of a browning effect called the Maillard Reaction. Heating or storing honey for long periods of time will increase the production of a toxic substance called 5-hydroxymethylfurfural (HMF) " Interesting. I ended up using Yacon Syrup for my Roselle jam and it turned out great. Thanks for the quick response! :)

@@RootandElevate Do you really think the "National Center for Biotechnology" has your health in mind? Really? Heated honey and in conjunction with storage, has been used for a very very long time , with no evidence of harm to human health.

@@NarrowistheWay7 I don't really mean to challenge your point of view. One just have to do a bit of research to read that it is harmful. It's not just the National Center of Biotechnology. There are numerous sources that says is harmful. Do you have a source that says the contrary? If so, please post. I'm just sharing what I found. I'm doing an apprenticeship here in Hawaii for Beekeeping with an incredibly amazing Organic farm and their understanding is that you never ever cook with Honey as it is harmful. To each their own. Please do not get defensive. I'm sharing some valuable points here. Please direct me to sources where it says is fully safe and I'll bring to my teachers.

@@RootandElevate Of course there are sources that state it is heating honey is somehow harmful. The Biotech industry is owned and controlled by groups of people who want to humans to become hybrid with tech. I mean it is stated directly in the name Bio - tech. Sometimes the simple answer and solution is the best. Show me the source that documents someone dying from eating heated honey.

I guess we shouldn't heat the honey according to Ayurveda, it becomes toxic if we heat it! Can I add it later on?

You can certainly try. I have never heard that it becomes toxic, just that it loses some of the health benefits.
