I had a friend from Jamaica here in Pennsylvania, USA and he made me the best damn Jerk Chicken & Oxtail over a fire in his Carport one Summer and if we'd would've had this for dessert it would have been Da Bomb For Sure! I had to look this up: Red Label Wine is a brand of fortified wine traditionally used but it may not be easy to find outside of Jamaica. A good substitute is ruby port wine such as Taylor's. The flavour is similar to Red Label Wine with a slightly sweeter flavour. Overproof rum is commonly used but any 80 proof white rum will also work.

Should I say some children got it the easy way growing up? in my African culture where I come from, it is mandatory that you learn to cook, your mother will stick you in the kitchen with her, you mostly learned by watching your mother or an aunt or grandmother. many times you will have to cook for you and your siblings. I’ve had different types of bread pudding or what we’d call “capirotada” ask any Mexican & they’ll know ! The best bread pudding I had was made with a bit of rum & bits of pecans ,oh so yummy! The recipe for you all here! :D Soak ~1 c golden raisins in Bailey's, for at least 30 minutes. Just enough to cover. Okay if it is overnight, too. Preheat the oven to 350 degrees Fahrenheit. Use bread; whatever is "older/stale" should do. She used Hard -dough and Ciabatta. Cube the bread. Put aside in a bowl. In a separate bowl,: 2 cup (c) Milk- any will do (she combined carnation with lactose free) 1 c brown sugar 1/2 c Red Label wine 1/2 c Bailey's Irish Liquor 1/4 c Wray and Nephew White Rum 1 t (teaspoon) cinnamon 1 t nutmeg 1 t mixed spice from Irie Brand (I assume this is similar to Pumpkin Spice or something similar when used in baking) 1 Tablespoon vanilla extract 1/4 t salt 1 c condensed milk Mix together. In a smaller bowl, whisk 2 eggs. Pour the eggs into the wet ingredient mixture whilst still whisking. Whisk well. Butter a casserole baking dish, then place bread into the container. Sprinkle in the raisins. Pour the liquid mixture all over the bread so it is absorbed. Press down with a spoon to insure the bread is submerged. Cover the casserole dish with aluminum foil. Place on the middle rack. Bake for about 1 hour. It is done when the liquid appears absorbed. Baste with maple syrup, if desired. Hope this helps!
