That looks really delicious and I'm really glad that Kewpie is available in the West now. I'll definitely be trying this. The sliced cucumber seems like it would add a good fresh crunch.

Yum! ❤ In post-USSR countries we have a very similar salad, which is also a traditional New Year dish in our culture 😅 It‘s called Olivier, and the ingredients are: boiled carrots and potatos, cucumbers - fresh or pickled, boiled sausage, canned peas, hard boiled eggs and mayonnaise 😊

Oooh - this looks SO DELICIOUS! I've been making "Russian" potato salad for years but this is a whole new fresh twist on that! Kewpie is THE BEST mayo but for anyone who can't get it, regular mayo with a little added rice vinegar and a little sugar helps approximate it, along with a pinch of dashi powder or chicken bullion powder - I like to use lemon juice too instead of vinegar. I've been experimenting because I have 2 jars of regular mayo that kept getting pushed aside whenever we had Kewpie available and I refuse to waste them. Kewpie versus regular mayo is like a Ferrari versus a Ford - i.e. no comparison! *HAPPY NEW YEAR to you TAIJI* and all the best wishes for a fabulous 2025! Cheers from Oz!

I really enjoy the different use of Kewpie, English cucumbers, and ham/bacon. I love adding diced hard-boiled eggs too. Might not be to everyone's taste, but I love the mildness of Japanese/Korean potato salad. American Southern-style potato salad has its place too, but it is definitely a stronger flavor and you just adjust your menu accordingly 😊

no, since mayo contains vinegar, but if you like it sour, then adding vinegar won't be a bad choice!
