Just made this. It smells so good but mine tasted a little bit salty. Also I would recommend leaving the seeds in the guajillo peppers because mine did not have a kick of spice at all.

I had a variation of this for the first time years ago in Thailand 7 years ago. The best way to describe the experience was "confusing". It smelled a little funky, looked strange and I could see little shrimp heads sticking out. But it was so damn good. I think it may have been the most unique dip I've ever had and only today figured out what it was.

Thank you for asking. It provides a citrus flavor so you could substitue lime zest, lemon zest, lemon thyme, or a bit more lemongrass. Otherwise, you can totally make jeow bong without it and it will still taste wonderful. I personally love the leaves and think it does make a big difference in flavor. But there is no wrong way if it pleases your taste buds. Good luck!

Jeow bong is my favorite for Lao sausage. If you would like a brighter and lighter dipping sauce, I'd recommend either tomato or eggplant jeow.

How long can you keep the sauce without spoiling?

If you cook and store in very sanitary conditions it can last a month. I keep in the fridge. And I never dip rice/food into the container. I spoon out the amount I need. You can also freeze for up to 6 months.

Omggggg cannot wait to try this!! 🤤 I’m a dummy and haven’t learned to enjoy padaek (YET*)… do you think replacing the padaek with fish sauce would give a similar result?

Padaek is hard to substitute but I think the closest item might be anchovy paste, if you like that. You could also just use the fish sauce and add a little more MSG or a dash of chicken bouillon or mushroom seasoning to get the umami flavor. There are lots of different padaek brands. The one I find to be less “fishy/stinky” is Tummour Thai brand. Hope this helps.

haha! I know MSG is not for everyone. I really like it so I put it in most everything, even if i dont need too. Its like American's putting ranch dressing on everything.
