I had a variation of this for the first time years ago in Thailand 7 years ago. The best way to describe the experience was "confusing". It smelled a little funky, looked strange and I could see little shrimp heads sticking out. But it was so damn good. I think it may have been the most unique dip I've ever had and only today figured out what it was.

Sabaidee! Our last name is Chanthasene. :) I am not fluent in Lao. I mostly know words related to food and cooking. Haha. A lot of times I can understand when Lao is spoken because I'll recognize words, phrases, and notice the tone and body language. :) Otherwise I smile and nod haha.

Jeow bong is my favorite for Lao sausage. If you would like a brighter and lighter dipping sauce, I'd recommend either tomato or eggplant jeow.

I’m American, Thai, Laos and Chinese. One of my fav. dish. I use more ingredients. Add fresh ginger and green mint leaves to bring more flavor. Impressed how this turned out by you. Looks delicious!!!

Cooking the noodles separately rather than rinsing them and throwing them into the main soup pot is a good idea. It keeps the noodles from bloating in the main soup pot. I am going to attempt to make these noodles now. We usually buy them at the Vietnamese grocery store that also carries Lao items.

Thank you for another yummy recipe! Can you help me with the noodle measurement? I dont understand how much dry noodles you started with because my package is in grams, says 1 lb

If you are making the same amount as I did in the video you'll need 3 lbs of noodle. That would be about 1400 grams. If you only have a 1lb bag of noodle, then only use 1/3 of all the other ingredients. Good luck! I'm excited for you.
