I saw you'd not removed the skin of the Kobocha, so I assume the skin is tender compared to the squashes you'd recommended below. Looks yum and healthy. Thanks

We do eat kabocha skin in Japan! If there are hard/tough scars/bits on the skin, shave off... that's about it. We remove the skin only when you focus on yellow-orange color... such as soup or desserts that we want to keep the color (with green color included, the color is not pretty). Otherwise, we always eat the skin!

Kabocha skin is quite tender and not as tough and fibrous as other squashes. If you're not using kabocha, I'd suggest peeling as normal. But if you can get kabocha-- eat the skin! It's so good!

@@aruku4round I am fortunate enough to have a vegan oyster sauce available to me. However you can make one! Most of recipes you find will tell you to do a mixture of soy sauce, sugar, dried mushroom, maybe some miso.

Interesting! My mom-in-law makes Kabocha simmered in shoyu and dried ebi... simple but so yummy!! 🥰 Dunno if that's common japanese dish or fusion japanese and local hawaiian dish? 🤔😁

Is Kabocha similar to pumpkin? May we use regular pumpkin un cas we can't find kabocha?

The texture is between squash and sweet potato so kabocha is on the firmer side. Please adjust the cooking time. Also, Kabocha is much sweeter in taste similar to acorn squash which I think is less sweet.

Best recipe for Buttercup squash. It actually works better with the skin on. Who would have thought. Great tip on using the microwave to soften the squash. Not norally a fan of pumpkin but this recipe will do nicely for variety in veggies.

Because kabocha takes a longer time to cook, and you will overcook the meat. You can take out the meat temporarily too. :)

Yum! I don’t have a microwave. How long would you recommend steaming the slices beforehand?

To keep the shape of kabocha, I recommend steaming ahead of time. It really depends on the thickness, but 3-5 minutes? As you see in the video, you can steam again with meat. So pre-steaming should not complete cooking. :)
