Pre-toasting the breadcrumbs seems like a really good idea to make a baked tonkatsu as crispy as a fried one. Thank you, Nami san!

Gonna have to try this..I make Tonkatsu at least once a week every month, it's one of my favorite foods..it's turned into a comfort food for me really, right up there with pizza. I've never tried baking it though so I'll have to give this version of it a try, it's not that hard. I live in the south so I grew up with pork chops as a staple food my grandma cooked, I actually got her to enjoy tonkatsu but she was always very classic southern and preferred classic fried pork chops.

The toasted panko looks so good! 4:27 the food investigator emerges! Honestly I'm not a big fan of raw cabbage (we tend to curry, fry or cream it) but I figure as the sando sits for five minutes any residual heat will probably make it more palatable. It looks amazing.

I made these today. But I had to substitute a bit. Instead of tonkatsu sauce I used kikkoman teriyaki sauce sesame (the yellow one) and cooked it with a tsp starch to make it thicker. Also I didn‘t have cabbage so I used some leftover chicory I had in the fridge. And I added a cooked sliced egg. Very delicious! The meat was not dry, it was really soft. Loved it!
