Some of you have requested for a basic keto butter cake and I thought it would be easy using the base of my existing cake recipes. Unfortunately, I was wrong, and I had to try a few times before getting it right. It was too wet when I added the usual heavy cream. Then I reduced the amount of butter and cream, and it was still wet. Finally, I removed the cream, increased the butter and it turned out perfect.
After baking, you may find that it appears oily from the butter but it is normal and that is what makes the cake moist. Just use a paper towel to absorb any excess oil from the bottom of the cake. Once you chill the cake, the oil is not so noticeable and it remains moist.
Both options taste as good but of course, the coconut flour version is always a better option in terms of lower net carbs, lower cost and good health benefits.
For those who have a problem with eggs, I will attempt to make an eggless version, so fingers crossed!

NUTRITION INFO PER SERVING (COCONUT FLOUR)
Total Carb = 0.8 g
Dietary Fiber = 0.3 g
Net Carb = 0.5 g
Calories = 128
Total Fat = 13.5 g
Protein = 1.7 g

NUTRITION INFO PER SERVING (ALMOND FLOUR)
Total Carb = 4.6 g
Dietary Fiber = 2.1 g
Net Carb = 2.5 g
Calories = 238
Total Fat = 23.2 g
Protein = 5.9 g
INGREDIENTS
Coconut Flour = 90 g / 3/4 cup (OR Almond Flour = 300 g / 2 1/2 cups)
Baking Powder = 8 g / 2 tsp
Salted Butter (Room Temperature) = 225 g / 1 cup
Salt = 1/2 tsp (Optional especially if using salted butter. If using unsalted butter, you may increase the salt content accordingly)
Monk fruit = 100 g / 1/2 cup (OR any keto friendly sweetener)
Eggs = 4 large
Vanilla Extract = 1 tsp
DIRECTIONS
1. Preheat the oven at 350F or 180C.
2. In a bowl, beat the butter and erythritol at medium to high speed until light and fluffy. Scrape the sides intermittently.
3. Add the eggs one at a time and whisk to combine.
4. Add the vanilla extract and whisk to combine.
5. Add the coconut or almond flour, baking powder, salt and whisk at low speed to combine. The batter should be smooth and thick.
6. Scoop the batter into an 8x4" loaf pan lined with parchment paper. Spread evenly.
7. Bake for 40 mins for the coconut flour version and 55 mins for the almond flour version as the loaf is bigger. It is done when a wooden skewer comes out clean.
8. If the top is browning too fast, cover with foil.
9. Once the cake is done, rest it upside down for 15 minutes. This is to prevent the butter from settling at the bottom. After resting, turnover and slice the cake accordingly.
10. The cake can be kept at room temperature for about 2 to 3 days if you have a cool and dry climate otherwise, it is better to refrigerate earlier. The cake can be eaten chilled, and it actually taste good. It can also be reheated for 30 seconds in the microwave.
11. The cake can be refrigerated for up to a week and frozen for months.

I made this cake using 1/2 cup coconut flour and 11/2 cup almond flour and 5 egg. Cake came out amazing! Soft, moist and full of flavor. Thank you for the recipes, please do not let any of the negative comments hinder you. Keep moving forward and know that you have people that appreciate you and your recipes. To all the naysayers, there is an old saying, if you do not have anything good to say, then don’t say anything at all. Apparently your parents did not teach you respect and manners.

I have to tell you I made this cake but I made some changes just because I wanted a more heart healthy version and I love lemon pound cake.So I used coconut oil instead of butter,we used one whole lemon and lemon zest from the lemon and a tsp of lemon extract to the recipe and this cake taste like a lemon pound cake.This going to be my new go to.Thank you.

Made coconut flour version yesterday, super easy and delicious! I halve the recipe and use cupcake mould instead of loaf pan, yields 6 cupcakes. Bake mine using air fryer with 160C for 14 minutes. Thanks for the recipe 🤤

I made both versions of this yesterday. I used 75g of Lakanto golden as sweetener, added the specified salt as kosher, and just noticed that I forgot the vanilla. I can offer the following recommendations and comments. After cooling for 20-30 minutes, flip them over so the still warm butter doesn't all pool in the bottom of the loaf. Sweetness is good, I wouldn't go more, but a little less might be fine. By the end of a slice I get a bit of the aftertaste and cooling sensation of the erythritol (I have to start trying allulose). When they're still slightly warm the effect is greater and you can taste the salt. Both taste best cold. The coconut version is softer, almost creamy feeling when you eat it. The almond version is closer to a cornbread texture., which is probably why my non-keto wife likes it better. I'll have to try splitting the difference between coconut and almond flour (45g and 150g) and see if I end up with the perfect version.

Hmm I just made it using coconut flour as well... I have to say I’m not as thrill as you. The texture is very flaky. It’s not dense at all like real cake. Not even 50%... it’s almost like eating crumbs that smells like cake :)

Very tasty, just made it thank youuuu my recipe : 150gr butter with 1/4 cup of sweetener than 3 eggs, 1 cup and 1/4 of almond flour and 1/4 cup of coconut flour, 1tsp of vanilla extract, 1tsp of salt . I added 2 tbs of maple syrup and i also added some mixed nuts on top. 😍

I just made the coconut flour version. I’m a novice at baking so didn’t understand the implications of “you can use other keto friendly sweetener to taste”. I substituted the erythritol directly with half a cup of stevia. Cake turned out beautiful but inedible as I probably should have used fifty times less stevia! Would be good to get the stevia and other keto sweetener amounts on here. Thanks though, even though I couldn’t eat it I was so proud of it!!!

When I tasted it, I found 100g Erythhritol not enough, even though I'm not a sweet lover. So, I've decided to try 150g. It's now baking in the oven ! Good idea of listing doses of common sweeteners such as erythritol, xylitol, stevia, and monk fruit.

I made the coconut flour recipe yesterday and it's very good. Because I have full sun now, I decided to bake the butter cake outside in my solar oven. The cake turned came out moist. I served with sliced strawberries - family loved it. Making another one today!

I made this for my mom who's been diagnosed with type 2 diabetes. Before eating the bread(cake) her glucose was 129 and 2hrs after eating the cake was 110. Needless to say I'm very impressed with the result, because 'usually' her glucose spikes up to at least 200 if not more when she eats regular meals, i.e, white rice carbs bomb. The bread was so fluffy she even commented it's the best bread I've yet made as she didn't constantly need to drink up water to digest. She also had been through partial gastrectomy so the more water she drinks up, the less she can consume meaningful calories. The only downside was she had a terrible diarrhea in the 2nd day eating this bread. It must be due to high concentration of erythritol in the bread. So next time I will use 30g of erythritol or less and see how it goes. It will not taste as sweet, but upsetting her bowel is the last thing I want.

Thanks so much for your feedback ❤ As for your mum's diarrhea issue, I suggest you try monkfruit (Lakanto) which does have some erythritol but I understand that it doesn't cause stomach issues. Alternatively you can try stevia which is available in granules, powder and liquid. You can get all these sweeteners online.

@@lowcarbrecipeideas Actually I made another one just now with only 30g erythritol in it. So far so good, no side effect. It tastes like a sweet potato which she loves it. I'm thinking about reducing erythritol down even further to be extra sure. As for stevia, I'd read two researches done on animal subjects(lab rats) proving it damages cells nucleus in cerebellum. I know it's just an animal experiment, but since mom also had been diagnosed with idiopathic cerebellum ataxia I'm not taking any chance. Erythritol was found to aggravate symptoms related to cerebellar ischemic such as stroke. But of all the artificial sweeteners, for now I think it's probably one of the safest option available to her. Anyways thanks for the recipe. Really appreciate it.

Thank you so much for this wonderful recipe! I gravitated to it instantly because it's almost exactly the same or very very similar to my own standard non-keto butter.cake that I make quite well. Now I've switched to keto living, I am amazed and relieved to find this recipe! I tried it tonight but aiya, I FORGOT to add the baking powder! The batter had only been in the oven 2 or 3 minutes so I took it out quickly, added the baking powder, mixed it in as thoroughly as I could and hoped for the best. Well! The cake came out alright! It looks and smells amazing, and I flipped it upside down so as to let the butter spread throughout again while it is hot, and let it cool 30mins, waiting eagerly. And my family LOVED IT. It's so tasty! And moist! And yum! Thank YOUUUUU!

Just made the coconut flour version of this cake and it turned out delicious! I used 80g of xylitol so it was the perfect amount of sweetness. I think next time I'll make a marble cake version of this cake. I'm also thinking of making a banana cake version. The possibilities are endless! Thank you for a wonderful recipe.

Well, I misread your video recipe and used the entire amounts of brown rice flour (replaced coconut) and almond flour, together. I also used Xanthan gum (-½ teaspoon per cup of flour). I used monks fruit for sweetener 1 1/2 cup and everything else was the same. IT WAS DELICIOUS, and the density and texture were just like wheat flour pound cake. What a surprise, I felt sure I ruined it, but no, it was perfect! Thank you, for your wonderful recipe. Who knew it was so forgiving.

@@lowcarbrecipeideas ofc! 1/2 cup CF and 1 1/2 cup AF. I wanted a bigger cake but also didn’t want to use too much almond flour because of Omega 6 concerns. It came out perfect. Didn’t change anything else

I tried the coconut flour version with xylitol. Need to reduce the amount of sugar next time because it is too sweet for me. The coconut flour version is very soft and seems to break into crumps easily when it is still warm, however it is perfect when chilled. Taste yummy!

I did it and it went almost exactly as shown Maybe due to variations in oven heat & time I believe I need to lessen the heat to 325F and increase time a bit. Thanks so much!

@@nuramalinamuhammad1938 Unfortunately you can't as it may affect the texture. You can try adding 1 tsp White vinegar or vanilla extract to reduce the eggy taste

Hey, I just wanna say thank you for this recipe. I'll try it out when I have more butter. I also wanna add that I tried your coconut pull apart bread. and it came out b-e-a-uuuuuutifully. Except for the part where I didnt have erythritol so I used stevia and put a little bit too much in which completely ruined the taste.. But that was my mistake. Im definitely making those again and I will definitly try this! Thank you for all your efforts

I am making the coconut one right after watching this video. It was not wet enough to “pour” in the pan. I’m not sure if it is because I am using a different coconut flour than yours. I added plenty of liquid because it was the consistency of a crumb cake. I had to end up making rolls. So I will let you know how they taste. They are in the oven.

I realized based on feedbacks that in some places their coconut flour is not the powdery type. Its stated coconut flour on the packaging but the coconut texture is quite coarse something like dessicated coconut. In view of this, it wd not be able to absorb the liquid properly. But you can grind it further until powdery before using. Not sure whether this is your case or not.

If you use salted butter, then you don't have to add salt. Only add salt when you use unsalted butter.
