Low carb, gluten and sugar free Keto Lemon Bars are the best snack. Made with an almond crust topped with gooey lemon filling!
INGREDIENTS
For the Crust:
2 cups (200g) almond flour
7 tablespoons (100g) butter, melted
1/4 teaspoon salt
2 tablespoons powdered erythritol
For the Lemon Filling:
4 eggs
7 tablespoons (100g) butter, melted
2 cups (200g) almond flour
Fresh juice and zest from 2 medium lemons
A pinch of salt
1 teaspoon pure vanilla extract
2 tablespoons powdered erythritol
PREPARATION
1. Preheat the oven to 350°F/180°С. Line an 8 x 8-inch pan with parchment paper and set aside.
2. In a large bowl, combine the almond flour, melted butter, salt and powdered erythritol, and mix well. Transfer the mixture into the lined pan and press into place.
3. Bake the crust for 13-15 minutes, or until golden. While it is baking, prepare lemon filling.
4. In a separate bowl, whisk eggs, salt, melted butter, vanilla, almond flour, and powdered erythritol. Grate the zest from 2 medium lemons and squeeze out the juice. Mix well.
5. Remove the crust from the oven. Moving quickly, add the lemon filling and smooth it out evenly.
6. Bake for 15-20 minutes.
7. Remove from the oven and let cool in the pan completely, before refrigerating for at least 2 hours, to firm up more.
8. Serve with whipped cream.
