I can't wait to try these! Also, I don't know if this would work with your breading but I would have the liquid and dry ingredients in seperate baggies. Put in a certain amount of onion rings in baggie 1, shake and squish, then transfer to baggie 2, shake. Helps to save some time with the batter process

I think I'll always keep the dual cameras. What I did now is put in an overhead rig so the overhead view is actually above the food instead of a 45 degree angle. The idea was to help with shadows and give a wider shot. It's also easier to set up, I posted a pic on Instagram if you're curious.

Just make sure the rings aren't touching, or they'll get all stuck together. One of the reasons I didn't use an airfryer for this was that mine is too small to make a reasonable sized batch. Let me know what temps/times you decide on!

@@chancecatesmorrow I just did a breast that I cut a pocket in, then stuffed with a keto stuffing mixture (spices, cheese, husk powder,etc). Then I smoked it for about 3 hours at 250 before cranking it up to 375 for the last 30 minutes to get the skin crispy.

The next challenge would be the ever-elusive frying batter rather than a type of panko. I'm imagining that protein powder would be the main ingredient. I know it's not strictly keto, but I've found that the addition of a bit of corn starch (which is relatively low glycemic) helps a lot with the crisp of breading
@blacksheepketo3 жыл бұрын
Funny enough, this recipe originally didn't have the panko coating. I added it later on because I realized that all of my favorite onion rings from different restaurants use a panko coating. Just the batter doesn't get crispy enough for my liking. Anyway, If you thicken this batter with a bit of xanthan gum, it'll actually work without the panko. If you don't thicken it, it'll just melt off during baking. I wish there were a good keto substitute for corn starch. I'd try that for personal consumption, but I have to be careful when I release recipes. People will flip out over a trace amount of ingredients in a recipe. Personally, I do take into account quantity. There was a phase in the keto world where everyone freakout on people for using shredded cheese because of the anticlumping agent (potato starch). The problem is, if you eat of enough of it to make a difference, then you're gonna have bigger problems related to the amount of cheese you ate LOL.

Do you have an onion ring almond or coconut flour recipe? Would love one. Thanks
@blacksheepketo3 жыл бұрын
Yes and no. I did a mozzarella stick recipe when I first started KZbin. It'd work pretty much the same. The problem with coconut flour is that it's really sweet and doesn't taste great if it burns. Almond flour is possible, but you'll need to panko to make it really crispy.

@@blacksheepketo great thank you. I’ve just purchased from Amazon. I’m in the uk and it’s really great that you explain the weights and sizes in grams and mls etc. I’ve asked so many content creators how much is a stick of butter? (Ours is in 250g blocks so you can see where the problems can lay). And physically a cup of something is surely a different amount each time if you are talking about something that needs to be chopped into different sizes. Really appreciate the extra effort for us over the pond 👍

Not from my channel, sorry! My wife is allergic to a lot of vegetables/plants, so I have to be really careful with that when cooking. Everything from mushrooms, to spinach, to avocado will make her sick. It kind of eliminates a lot of my options. I make my own ranch because I'm kind of a ranch snob. That being said, I'll east most ranches. Most of them are like 1 carb per serving. Now the ingredients aren't great in all of them, but it's usually trace quantities of the ones you'd want to avoid. Also, quite a few are made with soybean oil. That's not exactly a great oil, but won't directly affect ketosis in any way. I prefer to use olive oil when I can, but 80% of that is adulterated with soybean oil anyway. The stats for avocado oil are even worse. At the end of the day, most store bought ranch will not affect ketosis. What it comes down to is how your body reacts to the ingredients in it and how "clean" you want to be. You'll see massive bias on the internet towards insanely expensive and "clean" ingredients, but keto works even if you can't afford that. You just have to do what works for you.
