Your onion rings appeared to not do it, but many times the inside of onions slip out of the coating when I take the first bite. A tip I learned from another KZbinr, @The Salted Pepper, for her regular onion rings is to take the time to peel the very thin layer off of the inside of each ring before dipping in the egg and batter. It works like a charm. Something else to try is to dust each ring very lightly in straight coconut flour before dipping in to the beaten egg and the seasoned breading. I find it helps the breading stick a little better and helps with the crunch. For a dipping sauce, I love to make a mock Blooming Onion sauce. Mix together mayonnaise and ketchup to taste, or use premade Russian or Thousand island dressing, and add grated white horseradish to taste for some kick. So, so good.

I always put a bunched up wet paper towel on the cutting board when I cut onions. Works like a charm because the enzymes in the onion cling to the first liquid source they can find, that’s why it stings your eyes.

When cutting onions, keep the root end on. The layers won’t slide around on you & you can cut even slices. Bobby Flay said this on one of his shows. I tried it and it works like a champ!

Because the chemical in the onion is attracted to moisture your eyes are closest moisture and the fumes are attracted to them. Use a wet paper towel beside where you are cutting the onion. This will attract the chemical and walla no more tears!

The burning to make sure ice water is from sulfur. It rinses off so if you cut your onions by the sink and rinse them as you cut them it will wash a lot of that away. Other than that all I can think of is to have a fan blowing over them so it blows all of that away from you

For less crying you can refrigerate the onions. And you can put a wet paper towel beside the onion. According to Ryans World it’s a chemistry thing that the onion fumes are looking for water, hence the eyes watering. The wet towel attracts the onion fumes.

@@mikepurvey5205 As I usually make 2 big trays it takes me easily at least 45min to 1h at 220°C, because I love them with a little bit of crispyness and color. It's obviously a matter of being attentive after the first 35min and watching your preferences but at middle of cooking it's best to give them a toss for them to get brown in both sides. I wish I would’ve watched this last night. I just tried another recipe where you go from eggs to almond flour back to egg and into the pork Panko and it just didn’t work very well. I got a couple onion rings that were mostly covered but for the most part it all just fell off and once I tried to pick it up or dip it in ketchup it all just fell off in the catch-up for the most part. I think the Parmesan probably helps it stick a lot better add mixing it ahead of time is definitelyBetter method, trying to go back-and-forth twice just doesn’t work. Before keto I always made a batter for them and I would throw the onions rings in the freezer for a little while. I think the cream in your egg helped as well. My egg didn’t even stick to the onions that well. The pan I fried them in was a huge mess also because so much of it fell off. I think your way would work a lot better. Those look really good. Also say that the catch-up is going to matter for the onion ring taste. Are use primal kitchen which for everything else I love, it’s a great taste in catch-up but it doesn’t have that vinegar tang to it and I definitely miss that with the onion rings.
