Your channel is a blessing to me. As a private chef (done my fair share in restaurants too), I am always striving to find new techniques and recipes, as well as enhancements to those that have stood the test of time. I also have to balance it with time consumption and sourcing the right ingridients. And I gotta say, you have that balance just right. Just beautiful cooking on your part. Flavour profiles, sharp and bold combinations, attention to texture and detais, presentation - it's all there. Hats off to you, dear Sirs.

Yeah but, MSG is an excitotoxin. Meaning, it excites some of your brain cells to death, it's so "good". Of course we eat it in chips and other junk food, but when you're cooking at home there's no excuse.

One of the things you notice if you’ve worked in a kitchen, is how much care is given to each individual piece. Lesser cooks, lesser kitchens, will focus on batches… while here every onion was given a moment’s attention.

They looking so amazing! Could you use the same recipe for double coating to make battered chips? I mean "chips" in the British sense, i.e. fried potatoes. Obviously the chips would need to be fried first, then cooled so that they could be dredged in the flour and panko. Battered chips are delicious.

I’m always bummed out when I don’t like a particular food. I can’t do blue cheese. I’ve tried all different kinds in all different forms but it’s just a flavor I can’t get behind. For the people out there who love it I’m sure these amazing rings pair beautifully with that salty earthy blue cheese fondue! I probably wouldn’t skip it if I were there in person, I’d have to try it the recommended way! However there was a little Irish pub beat my house in Hudson Valley NY that made a horseradish dipping sauce for their onion rings. Man I couldn’t get enough of that stuff. DEFINITELY making these….
