Just made this for lunch, using cuttlefish instead of squid (what was in the market). The fishmonger slit the cuttlefish up one side to clean it, so I laid it flat to score it, and then when cooking it on a hot stovetop grill, I placed a heavy pot on top of it so it wouldn't curl up. Deeelishous! (I just went over to your website and registered.Thanks for making Korean food so easy to make at home!)

When I was taking cooking classes, we had to clean live octopus. That one was quite tricky. Ink everywhere and suction cups getting attached to your arms... Definitely makes your blood pressure rise a bit. 🤯

Did you have to go out and hammer your octopus on the rocks? that's standard procedure up in the north of Spain! All we can get here in the South is pre-cooked.

We don't have access to good fresh squid but the assi frozen brand worked fine. My 13yr old daughter made it. The sauce is fabulous though she cut the pepper paste and flakes by 2/3 because we can't take that level of heat -yet. The sauce also went really well with Katie's squid fritters as a dip. My husband liked the sauce so much he is gonna use it on chuck eye steaks.

Thanks a lot Chef, I'm living in Turkey and all the recipes were deep-fry recipe, as if I'm an American dammit! Loved this! Definitely gonna try in a few days with the squid in my fridge. For the goshujang sauce, I don't have the goshujang paste, and it's not available (at least not affordable here) I got all the other key ingredients, would a sweet-chilli prepaste work instead of goshujang paste? Or can you recommend something alternative?

The gochujang sauce is soo good. I couldn't pull out the guts. I really wimped out I just cut the side of the squid and peeled the guts out. It's definitely not as pretty but tasted soo good

Hi Daniel! That squid looks awesome! What banchan do suggest would work best with this dish? I don’t love the slimy feeling but I will try to get over that to make this. I want to try and learn some Korean so I’m not completely lost when I visit the country lol

Hey good afternoon Malone! Besides a bowl of hot rice, I would suggest something neutral in spice. Maybe some grilled vegetables - asparagus comes to mind. And since the octopus is pretty spice, maybe mashed potatoes or the Korean potato salad? Helps neutralize that spice. And yes, try your hands in cleaning fresh squid. Yes, a bit slimy at first, but a good culinary learning experience ;)

For sure Marielle! Just give it ample time to de-thaw. I will usually keep the frozen squid overnight in the refrigerator. Then let it sit in a bowl of cold water a few hours before cooking to fully dethaw.
