Hey Latif great video !!! Could you upload the video and prep for the lamb please ? What cut you used and what spices you used to tenderise it whilst steaming beforehand? I often steam lamb before adding to stews but the flavour hardly penetrates ....

Hi Latif, My wife is a vegetarian could you do a meal with a Vegetarian recipe. Love your food and the lessons I have become quite an expert now on Curry dishes thanks to you. I attended curry making lessons back in the 1980's my wife bought me a course for my birthday and I have been improving all the time, your lessons here have been invaluable. Don't worry i wont be going into competition with you i am a retired chef so my cooking is restricted to family and friends who are all familiar with the name LATIF by now. I live in Ireland and occasionally go over to Manchester to visit friends the next time I am going to try to get to your restaurant. Robert.

What I usually do is boil water in the pan and add a large dose of bi carb of soda and let boil for a short while. You'll see lots of black bits floating - which is the burnt pieces coming away. Also works good on cast iron. Give a good clean afterwards.

Excellent as usual. Can I offer a suggestion to include the cooking duration of each stage (eg: onion and pepper times) as well as the fast forward icons...:) Edit: Scratch that. Just watched the remainder and you done just that for different sections... Thanks!

I will try to be more clear what I'm doing at each stage because i agree with you! When i cook in the restaurant I know when each stage is complete not by time but by smell and look and feel so i try to teach people what to look for. If you check the description to this video, I put times but there are often visual clues as to when things are cooked, onions going translucent or the smell of the spices when they are being cooked etc. hope that helps!

I’ve enjoyed watching a number of your informative videos so far. I was wondering if it was common place for restaurants to have ready made sauces and pastes bought in jars like the Pataks products that appear on your shelves. Is this for convenience, or just used for dishes that aren’t requested so often, so that you don’t have to make them from scratch ?

I see a lot in indian dishes using one or two large wedges of tomato. What is the reason for using it in wedges here vs using it chopped in the tarka dhal. In the past I have been grating tomatoes to use in curries, this avoids the skin and makes it sorta like a puree. If I am cooking at home would I be better using tomato passata or grated tomatoes in place of your tomato puree?

It doesn't really matter as long as they're real fresh tomato, traditional Indian curries use proper tomato not tomato puree cause it adds a layer of 'tartness' to the dish you really just want the essence of the tomato from the fresh chopped ones water. You're always better off going chopped but be careful cause they dehydrate and burn fast if you just add them into the pan with the spices (especially with a Dhal) I'd wait until the lentils have been added then add your wedges in.
