Here you go. Sorry for leaving it out - out mistake 1 1/2 cups (380ml) granulated sugar 1 lemon 220 g cream cheese 170 g mascarpone 1/2 tsp vanilla essence

Made this for a plain sponge cake. My family loved it. The cake lasts about an hour. Will definitely make this cream again. Couldn't believe how good it tasted. Very fresh and tangy. Thank you for a great video.

Wow, your tip with adding a little citrus juice if the mixture is too watery is fantastic, and your explanation for using it is very helpful. In other KZbin video comments, I read that people did have problems with such watery mixtures and they did not know why, nor how to fix it. This tip is great! :)

This is great. I've had bad luck with cream cheese frosting most of my baking life. I've tried working with cream cheese when its cold and when its at room temperature but both didn't work out and they either came out lumpy or runny. I love the idea of mascarpone cheese as opposed to butter (but mascarpone is pricey where I live so I'll give butter a try). I'm thinking creaming the butter separately to the consistency of soft mascarpone first and then adding it to the sugar lemon mixture along with the cream cheese will lessen the mixing time and reduce the chances of it getting runny). Another observation: I brought the cheeses out of the fridge about 30 mins before using them. They weren't exactly at room temperature (I live in a tropical climate so room temperature cream gets a bit too soft) but they were at a point where I could put a spoon through them with very little resistance and mix easily. Fingers crossed, I hope it works out with butter.

If I was to put this as a filling on a three layer cake...Do you think putting a layer of this and a layer of raspberry puree would taste good? And on what flavor cake would you recommend? Thank you!

great recipe ! Please i wanna make a birthday cake to my nephew,i have 2 questions : i only have mascarpone cheese at home,can it work for this recipe instead of adding other cream cheese ? I wanna use the covering to the cake and i'm wondering if this cream would be perfect as a base ??

Wow. Made that and it truly is very delicious. I used less sugar. It actually dissolves, just wait between whipping. I btw dont understand how pople can eat american buttercream frosting. So sweet and does not have taste depht or nyances. This mascarp one is top notch!

It's perfect for my son's birthday cake - I do have a question about freezing this frosting, on the cake, of course. I know mascarpone changes consistency after being frozen - would this be an issue since it would be mixed with cream cheese? I kinda think it will - but I'm just hoping it would work... :) Thank you Chef

I made the frosting without the mascarpone cheese ( couldn't find it) using only butter. It tasted delicious but y could feel the sugar in the frosting. What went wrong?

Luz Padilla Granulated sugar tends to be more coarse so I think he wanted it to be in order to add some sort of texture to the cream and some bite to it? I normally would use caster or icing sugar to ensure that the cream is to my liking without the crunch/bite of the coarse sugar.

Luz Padilla I used the granulated sugar myself. I beat the frosting a bit longer than I normally would with powered sugar (actually a lot longer). I was also serving outside a while after I made it. I dont know if it melted some as a result? The sugar was fine with only the slightest bite in some pieces.

We'd probably recommend keeping the cakes and frosting in the fridge after a day or at least in an air tight container.Glad you enjoyed the recipe!

it looks like a lot more than 8 oz cream cheese and 6 oz mascarpone....but i'll try and see. hopefully the measurements are correct.

Hi, did you use room temperature cream cheese and mascarpone or cold? And many many thanks for the tip about adding citrus juice if the frosting is loose, this tip surely will go a long way.
