The reason you can't see all the vertices after adding a solidify modifier is because the faces are inverted. You can fix this by going to edit mode and select all vertices then click Mesh > Normals > Recalculate Outside.

I really love this tutorial but it isn't beginner friendly, it seems you need to know all of the shortcuts and have the colour grid downloaded (which I don't have) to be able to follow along( I didn't even know how to pan the camera lol) . Not to say, it wasn't helpful, it helped me a ton and I'm Thankful for your easy going tutorials, If I had one criticism it would be just, if your doing a tutorial on blender, assume the audience is at 0, baby level, because you will def find ppl like me, who want to pick up a 3D from zero, so maybe have the short cut keys soon the bottom left or right of your tutorial 9. 5/10

Go to edit mode, hit the face select mode at the topish left. Select the top face of the mesh you want to scale in, then hit (S) on your keyboard and use your mouse to scale in or out.
