Sungta Ani Kyuvalyachi Kadi / Mangalorean Style Prawn & Ash Gourd Curry
Traditional Mangalorean recipe which is mace of Ashgourd and prawns. The juiciness and delicacy of the ashgroud enhances the taste of the curry. This dish goes extremely well with hot boiled red rice.
Ingredients
300 grams prawns
600 grams Ash gourd
1 - Large tomato
Salt & water
For the gravy
Kashmiri & byadge chilies (I have used mix) - 7 to 8
Coriander seeds - 1 tbsp
Cumin seeds - ½ tsp
Mustard Seeds - ¼ tsp.
Pepper corns - 8 pieces
Turmeric powder - ½ tsp
Garlic - 3
Onions - 1 medium size
Coconut - 1 cup
Tamarind - small piece (marble size)
For the tempering:
Coconut oil - 1 tbsp
Mustard Seeds - 1 tsp
Garlic - 2 cloves
Curry leaves - 2 springs
