Ingredients :
500 g Ash gourd (cut into cubes)
500 g prawns/shrimps
3-4 tbsp. coconut oil
1/2 tsp garam masala
1 onion sliced
salt to taste
few curry leaves
For the Masala :
1 cup grated coconut
6-7 dry chilies (more or less)
1-2 big sliced onion
4-5 garlic cloves
1 tbsp. coriander seeds
1 tsp cumin seeds
1/2 tsp mustard seeds
1 tsp pepper seeds
1 tsp fennel seeds
1 small ball of tamarind
1/4 tsp turmeric powder
5-6 curry leaves
Method :
Peel the Ash gourd and cut it into medium sized cubes. Rinse well and cook adding salt and water and keep aside.
Clean, devein and add 1/4 tsp turmeric and some salt. Mix well and keep the prawns aside for 10-15 mins
Heat 1 tbsp. coconut oil and roast all ingredients under "For the masala" one by one, separately . First chilies , Onions & garlic , Spices and then coconut. Remove and let it cool completely.
Once cooled, grind the roasted ingredients adding turmeric and tamarind together using a little water. The masala should be fine paste.
In a cooking pot heat 2 tbsp. coconut oil & add one sliced onion. Fry until it turns golden brown. Now add few curry leaves stir for few seconds. Add prawns (rinse prawns well before adding) and give a nice mix. Cover and le it simmer for 1-2 mins on low heat.
To this add the ground masala paste and the reserved masala water derived from rinsing the grinding jar. Add some salt and mix well. Bring the curry to a boil .
Now add cooked Ash gourd , 1/2 tsp garam masala and adjust salt. Gently mix and cover cook for another 1-2 mins on low to medium heat and its done.
Serve hot with rice n Enjoy !
