I love this drink. I'm Puerto Rican and we make this with ginger, cinnamon, clove, dried avocado leaves, and pineapple peels. Usually we ferment it for about a week but the longer the better.

And essence added. So delicious cold with a piece of cassava pone.

This is my favorite caribbean drink for me as a trinidadian, this is why I prefer the real thing from scratch rather than mauby syrup one thing I like though is that bittersweet taste, that dark brown color and frothy texture it's just a refreshing experience

I grew up drinking mauby in Trinidad. I have never seen all those things added to it. I like it boiled with aniseed very strong/bitter & sweeten it the next day. I like it bitter.

What is essence? Is it similar to vanilla extract?

In PR we use ginger and let it ferment for at least 6 hours to several days in the sun.

Essence is the same as extract. Some people call it vanilla extract or almond extract & others call it vanilla essence or almond essence.
