1 roasted poblano pepper, peeled, and chopped
4 corn tortillas, torn into bite size pieces
6 tablespoons oil, divided
1 jalapeño, deseeded and chopped
½ cup onion, chopped
4 eggs
¼ teaspoon black pepper
½ teaspoon salt
3 oz. shredded pepper jack cheese
1 tomato, chopped
queso fresco (optional)
