I searched all over Kuala Lumpur for a good Nasi Lemak - 椰浆饭 some were good and some not so good.
After checking on Google I came across Angie's recipe on KZbin.
Being a fellow KZbinr I contacted her and she very kindly invited me to her kitchen to learn how to make a true Malay Nasi Lemak.

You will Need
Coconut Milk Rice
1kg / 5 1/2 cups rice, preferably basmati rice
6 cups water
200ml Thick coconut milk /1 coconut
3 pandan leaves / screwpine leaves knotted and slightly bruised
2 sticks lemongrass, crushed
1 ginger, crushed
1 tsp sugar
2 tsp salt
Sambal Ikan Bilis (Chilli Anchovies)
3 cups ikan bilis (dried anchovies)
1 cup oil
3 cloves garlic
12 shallots
30 dried chillies or 150ml chilli paste
3 tsp belacan (prawn paste)
1 tsp salt
3 tbsp sugar
3 red onions cut thinly sliced
1 tblspn tamarind pulp soaked with 3 cups waters
Other Ingredients
6 eggs hard boiled, cut into halves
1 cucumber cut into slices
2 cups Peanuts
Fried Chicken
6 chicken pieces, cut into medium size pieces, Skin on
2 stalks curry leaves
1 tbsp chili paste ground dried chilies
1/2 tsp turmeric powder
3 tbsp salt
1 tsp sugar
3 tbsp cornflour
1 egg, slightly beaten
2 tbsp meat curry powder
Coarsely Ground Ingredients
2 inch ginger skinned
6 cloves garlic skinned
12 shallots skinned
6 lemongrass use upper tender parts
3 tbsp water
Finely Ground Ingredients
1 1/2 tbsp coriander powder
1 1/2 tbsp fennel powder
1 tbsp cumin powder

I am a Malaysia (Malay), I make nasi lemak all the time in my house. I love nasi lemak, my basic breakfast meal as a kid, mom used to make it often times..

Hi! I'm from Malaysia... i cook simple and easy Nasi lemak by replacing coconut milk to coconut oil,some salt and i use only pandan leaves water for the natural green color by blend it with little water to cook the rice. Try it and you will definitely love the rice fragrance by enjoying with any dish.

I have been cooking nasi lemak more than 10 years and this Huang style 90% close to my style. However I am still deeply disatisfied with my taste, believing that there is The Secret. Well done Steve, well done Huang. Thanks.

The difficult part to me is to marinate chickens with all those spices, but I love her so much like lovely mama, she looks kind and gently using soft voice when she giving description all about Nazi lemak!.Im put seven stars to her🌟

thanks for posting your recipe ma'am it's amazingly nice. I prefer grandma Habibah who stays near by my place coz she doesn't uses tamarind for her nasi lemak. sambalnya pedas & sedap betul . Rharesh 2nd year medical college boy.

something need to improve ,the rice need to add in garlic and onion and in the chili paste ,the anchovies need to blend and cook with small degree of heating about 20mins to increase the paste flavour

If you can't get Tamarind use lime or lemon.

As long the sambal taste little sour if not the sambal will taste bitter coz of salt and sugar.

Maybe i never try nasi lemak i don't know if i see ingredient similar with nasi uduk in indonesia .

I ate nasi uduk in aceh before, and the rice and sambal are quite similar to nasi lemak. The side dishes are slightly different but it's just as tasty.

Malaysia = Nasi Lemak, Indonesia = Nasi Uduk. Same dish with diff name. Otherwise Indonesian will claim it is belong to them. This is happened to Rendang, nasi goreng and satay.

Hallo Steve Owwns.. Recipe kamu sungguh bagus dan sempurna.. Tetapi masa kamu cabai nasi lemak, bahan yg paling mustahak.. Belachen goreng sudah miss out, dan semua bahan mencukupi.. Asam keping boleh tambah jika kamu tumis sambai nasi lemak, bungah rawang dua kuntum sudah miss out di sambai Nasu lemak.. Ok.. Gd job,, masa hadapan yg bergitu cermerlang.. thank u very much !

Nasi uduk its different with nasi lemak....they dont use ginjer....in Indonesia we call nasi gurih..espesially from Sumatra..like Aceh...melayu medan.Nasi uduk from Jakarta (betawi) .

I thinl i remember reading somewhere that nasi lemak consumption is one of the leading causes of obesity in malaysia

majority of malaysians either chinese, indian or malays are skinny. They eat 7-8 times from morning til midnight but still are skinny. I guess it's because of the sweating in the hot weather in malaysia.

looks nice Steve.. sorry, no offense.. as a Malaysian and a cook. I need to say the truth... the ingredient is right, but from the ratio of the ingredients, in the rice and the sambal.. I don't really think this one has the decent taste of nasi lemak..

Ahh! But it does taste Perfect and none taken but I ate hundreds of Nasi Lemak, from 5 Star to Street and just they right amount of love was added to every step.. :)

Another Malaysian again. o my god. will not turn out like I expected. Missing ingredient again. Still searching for original Singaporean traditional nasi lemak. Wrong ingredient, it will be another fake. So difficult to find one original nasi lemak stall in Singapore now, so many fake Malaysian receipe used.
