I use alfredo sauce as well as heavy whipping cream, it comes out beaucoup creamy! I'm so glad to see a fellow New Orleans native making this idk what to do with myself lol bc (no offense) but the people from out of town be doing what they want to our food. I'm always look forward to hearing from someone that's from the same area as i am! Yes i totally understand how you feel. They be adding fish, beef and corn into a gumbo like that doesn't belong. Then when you tell them something they wondering why we going off on them. They don't know about us New Orleans people. We don't play with our food especially our gumbo. I go into detail about it in my Gumbo 101 video! Just type gumbo 101 in the search engine and the video will come up. When you get to the video go in the description box and look up number 7 understanding the ingredients! It will give you the video mark in which that part starts on! :) They say us Louisiana people know everything like of course we have some of the best food everrr lol Yes i just posted a video of chicken and dumplings about 2 days ago. As the holidays get closer I will be extremely busy so it will be hard for me to release videos!

Great recipe! I just ordered 3 lbs of cajun craw fish tails from this awesome site I found online where I live. I'll be making fried craw fish with a cajun beer batter, craw fish Po' Boys & I will definitely be trying this dish out with my batch. I been looking for a good new craw fish pasta recipe to try. Only I was thinking of using fettucine pasta instead, cause that's what I have on deck. Will let you know how it comes out. Cheer!!!

THIS IS SOOOOO GOOOD! I did this today! I didn't have whipping cream, I had half and half. And I didn't have green onion and parsley, so I watered down white onion and parsley flakes and I got the wrong cheese lol (Italian style cheese) but still it's amazing! Thank you soooo much!

Lol i had way to many noodles and the bottom was burnt , so i put it in a glass pan and just took the burnt parts out , Popped it in the oven ( I had no choice )should be done any minute now Im from Houston,Tx

R6Rell OMG what did you do? You must've had your fire on too high or something. Yikes. lol Hope it doesn't taste burnt. Okay that should work but next time you have to keep a close eye out on it. Stir it every 1 to 2 minutes if you have too. Also turn your fire down when you add the pasta. Oh okay cool. Houston, Texas that's what's up!

I made this recently and it was very very good! But while I was eating and it was cooling, I noticed a lot of grease was starting to form in my bowl. By three quarters of the way through, I went and scooped it out because there was so much. How can I keep that from happening without sacrificing flavor? I'm making it again tonight and hoping to keep that grease out of it this time. Help!

If there's too much oil left over, reduce the butter to 1 tablespoon or if you want even less add 1 teaspoon. Thank you very much for your comment. I like all pastas! That's a difficult one to decide on! I would pick the Crawfish one since it is one of the first pastas I learned how to cook! As for seasonings just use the seasoning that is common in your area for seafood!

Just to let people know in case they haven't noticed, and in case they prefer local seafood. Despite the name, Bernard's crawfish are not from Louisiana but from China!! Check the back of the package. Like your videos!

You're right about that! Bernards crawfish tails are from china. I noticed this long time ago. They do sell the local louisiana crawfish tails. They are different in size, texture, and flavor. They are also expensive and hard to find. There are two local brands who sell them.
