So I just made this pasta and... Omg this was the bomb!! I cannot tell you how many recipes I have tried and just couldn't hit the spot but this!! This right here is AMAZING! I just want to eat the whole pot! Lol will be trying more of your delicious recipes!

Thank you Charlie for taking the time to video, cook, teach, edit & then post. Your videos have helped me in many ways. My family will be getting this tomorrow. I was struggling on what to cook and this recipe came up. I have most of the ingredients. My husband and his mother are from Louisiana however I'm a California gal. You take such care and I love how you explain why you do what do while cooking. I'm learning and becoming a better cook. I love how you seem to stay true to LA cooking and share. Keep em coming!

Notice how Charlie didn't add any oil to his boiling noodles, very smart. people love adding oil, turns out it just makes your sauce slide off the noodles. the ending result was perfect

I made this a few days ago. It was fantastic! Using fresh shrimp makes a real difference! I made a small modification: after I finished the step where the shrimp are sautéed with the onions, tomatos and spices, I added about a 1/3 cup of white wine and reduced for about 5 min before continuing with cooking. Thank you for the easy to follow recipe!

I'm so mad I'm just finding your channel! This is THE BEST shrimp pasta recipe I've found. I'm also a New Orleans native but moved to California 20 years ago. Charlie,First I would like to thank you sincerely for your unselfish efforts to provide us with your classy, southern, down home, New Orleans cuisine. I am most thankful for your efforts to give us a flavor of "how mama used to do it." You have made my 81 year old parents so happy, because I am now able to prepare meals for them that bring back those fond memories of the aromas and flavors that we grew up with. We are all Houstonians now, and you have created the vehicle to allow me to bring New Orleans to my parents' kitchen in Houston. I am so thankful I recently found your U-tube presentations.Second, I wanted to comment on the "New Orleans Shrimp Pasta" recipe. I followed your recipe on last week with a few minor tweeks to accommodate my parents' medical concerns. I have to be very careful with their intake of certain spices. Nevertheless, they were ever so pleased with the final product. In fact, I have literally replaced my "New Orleans Shrimp Pasta" recipe with yours, but I publicly give you all of the credit.Third, I was hoping to find a boiled crawfish recipe in your tool box but it appears as though you stick to indoor recipes. However, I would be happy to share my recipe with you if you desire. Just email me directly if you are interested. That is another favorite of my parents. They have remarked that my boiled crawfish is the absolute best they ever had.Finally, I wanted share with you that you have me laughing my but off with two things that you either do or say during your presentations. The first is during your introduction you often say, "Some people use thyme, paprika, and all that stuff. No, we don't do all that stuff down here!!!!! Right here is all you gonna need ok!!!!!!!!" The second, which I think is your signature, is when you are testing the final product. In some of your presentations, you point that index finger towards the camera as if to say "wait a minute" the you lift your right thumb up and pound on the table once and in a loud voice say, "Whoooooooooooooooooa, that taste good!!!!! And there you have it folks. New Orleans Shrimp Pasta by Charlie." I'm telling you I can be seen cracking my side laughing.In close, I know I'm a little wordy but you really don't know how much you have blessed me with the tools to return blessings to my parents in ways that I could never have done without your assistance. Thanks so much Patrick my fellow New Orleans native for the compliments! I am happy to hear that I am able to help you bring New Orleans food to your family's table in Houston! It really feels good knowing that! Don't feel bad! I used to be an Houstonian a few years back right after Katrina. After 9 months I returned back home lol Glad that you all enjoyed the shrimp pasta! Wow that is a huge compliment to replace your own recipe with mines. That is amazing. Just shows how good the recipe really is! I currently do not have a crawfish boil recipe out! It would be difficult for me to create that. I would have to get the tools etc to boil the crawfish and that by itself is quite a bit of money. Next you have the crawfish themselves which is also expensive! Hopefully one day I can create a video on the boiled crawfish. Yes most of the things I say in my presentations about how people be putting tomatoes and carrots in their stuffed bell peppers. We don't put that in our food lol That's not how we rock in New Orleans. LOL Also everyone loves the end part. I think it is imperative to let the audience know how the results of the food example texture and taste. You've seen the presentation already now It's gotta get a rating and that's where the table bangs come in at. The shrimp pasta video was the beginning of the table bangs. Everyone loved it and the rest is history! Again I am so happy to hear that I've helped you and your family in your kitchen one New Orleans recipe at a time. :)

Made this and it was very good.. Charlie man I am taking credit for your dishes. Like you said to the one guy that was rather rude you can tailor it to your taste and liking. Heck you can even add to the ingredients or take away but you gave a foundation. Me myself I like to sautee my shrimp for 2 mins then add them back for 5 mins only cause they can get tough but people should figure out how they like their food. Keep up the good work and keep cooking cause I am taking credit for your recipes man. As for Leonard man you took the high road he sound plain ignorant. You can critique someone with respect, something he needs to learn.. Last time I checked he is on your page and you were not on his.

I worked in a seafood restaurant, on the Northshore, that served pan toasted Reising's French Bread with the seafood pasta. It was so delicious with the sauce that we had requests for seconds on the bread. Split the loaf and cut into serving size pieces and butter each piece. In an iron skillet, toast butter side down until browned and the crust starts to crinkle from the heat. As it cools it gets crispy and delicious. I just about can't eat the pasta sauce without it. Deli french bread is not the same. Only Reising's or possibly Lidenheimer. I love your cooking!

Charlie I am sooo glad I found a cook from the N.O. I am mom/ wife that does not cook, but love to learn.Your video was easy to follow so easy that basically my 11 year old cooked the pasta. Although I couldn't find fresh basil that wasn't bad in three different stores my family enjoyed the pasta. I was so proud of this dish that I stayed up late looking for my next dish...it will be stuff baked potato. ...thanks!!!!

Today's dinner is Pasta It's 2:15am in the morning. Thinking about what I was going to cook. I have always use bottle alfredo sauce. Can I add different meats to this pasta, (example: crab meat, crawfish and lobster.. I will let you know how it came out. I will call it a seafood pasta. Thanks for teaching me on how to make the sauce. Do you have a reciepe for Kabobs.

Wow you're up pretty late lol Nothing like making your own pasta sauce from scratch. It's healthier. Yes you can add crab meat, lobster etc. Let me know the results when you're done! You're welcome! Glad that i was able to help! Unfortunately I don't have a recipe for Kabobs. Sorry.

I tried this pasta recipe for Christmas (I wanted to try a different pasta dish from baked macaroni this year). I was a little hesitant at first because I'm not a big fan of angel hair noodles but I used it anyway it tasted SO GOOD! Everybody loved it, including myself. I was asked to make more lol. I am so happy that I'm from New Orleans and I'm able to get all of these ingredients! I cooked this for a potluck at work and baby the pan of food was gone !! I wanted to say thank you so much for your time and effort. You are so consistent and detailed. I am from the upstate part of South Carolina so seafood isn't our focus. Growing up I mostly learned how to cook soul food. (Chicken, porkchops, etc) Yet I LOVVVEEE me some seafood. Lol So I was frustrated that I lacked the ability to prepare certian dishes. I foudn your channel and it's been the greatest thing. Because of you I've prepared some of the best cajun pasta, red beans and rice, and the catfish? Please. I've had friends request I make catfish at the next cookout. Lol. You are so wondeful. You are so appreciated. I thank you again.

OMG this dish is divine! Made this tonight after seeing your channel first time today, ground up my own Creole spice blend, used grated lime zest and splash of juice is definitely permanently on the menu and no not greasy at all even tho' I added a good splash of olive oil to butter oh and used Pecorino instead of Parmy.
