I used some dried parsley instead of fresh bc I forgot it at the store. My rice came out so incredibly soft my wife tore it up... So did I. Follow AB's recipe tweak per your likes but this is the 3rd time I've used it, homerun every time. Thanks, AB

I love Cajun dirty rice, when I make it I use a mix of ground chuck and hot sausage. And yes, celery is a very important part of almost all Cajun cooking.

Joining a network like Food Network is like share cropping , they will take all the profits & use his likeness and image for their benefit! It’s suicide for a self employed successful entrepreneur to join a network/corporation today! He doesn’t need the “network massa “ to be successful! This man has his own brand on youtube, merchandise online, podcasts, collaborations with other chefs, cook books, a restaurant in a mall and more to come! Cooking the sausage that way is genius! I learn something from you all of the time. By decreasing the surface area more heat is hitting the meat, causing it to sear instead of steam. That’s why I keep coming back!

I used Korean style short grain sticky rice, and had to adjust rice-to-broth ratio. I went with 2 cups rice/four cups broth. My broth was not low sodium, so I cut down on the added salt. It worked out fine. Tasty recipe.

What about the heat? Is the recipe spicy enough? A hot Italian sausage would do the trick and adding jalapeno peppers would also help. Some hot sauce also. I do not know what his Cajun seasoning is like but it seems he needs some more heat.

I do something very similar and call it breakfast rice. Using that sausage, egg, onion, bell pepper and rice. Soy sauce instead of w sauce, pepper, sometimes minced garlic and it is awesome. Love getting new ideas from your channel! Thank you!

Made this today..... We added some Andouille Sausage. Used a yellow bell pepper only. We also only had a medium grain rice, so we used that. Flavor explodes in your mouth. Next time we will do the same but with a long grain rice. Texture will be a little better. No complaints.... it turned out amazing. Thanks AB Also bought some stuff off your Amazon Lists. Garlic press, glass dishes, and Thermometer. Also ordered more Creole Kick just about out. Creamy Cajun Chicken in the pot to go with the Dirty Rice. Yes it is going down at my crib. Thx AB! This recipe is a family favorite. It is nice to see someone simplify the process for others who are intimidated by this dish and have only used box mixes. Every time I make this I have to double or triple the ingredients and I add both the sausage and the ground beef as well. I tend to use this as a main dish and then make some additional sides to go with it since I cook for a family of 7 sometimes 8 or as many as 10 depending on who in the neighborhood follows their nose to my door. lol Thank you for sharing this with us.

I find this is interesting. What a lot of people from different origins (places they live) call dirty rice, we called this rice stuffing or rice dressing normally made at Thanksgiving or Christmas time. We used the already cooked turkey liquids that was rendered that was already seasoned that had chopped onions, green peppers and celery in the liquid, chopped up turkey gizzards and livers, then our rice. Once everything was mixed, we added more of the trinity (celery, onion and green pepper) in cooking, in with the rice mixture and some butter for more richness. Back in the day, we didn't used garlic or the red peppers. They were not readily available to us. Today however, I cook with a lot of garlic, red , yellow and orange peppers that I favor over the green peppers.. So when I cook with green peppers I used very little finely chopped or diced. Then seem to have somewhat of a bitter taste. Since I still make what we called rice stuffing or dressing, I don't just make it during the holidays anymore, but when every I get a taste for it, because it's also great with roasted chicken or or Cornish hens.

No look up the real recipe he did a cheat version the original recipe using grounded chicken liver and gizzards but I like his version because it’s faster

@@zippydoo9533 Nah, not ghetto. You just speak differently lol. I didn't know the ice box and freezer were the same thing until my southern friend explained it to me lol
