The result of this recipe is outstanding. I did not use the Dutch oven however. Just portioned into 4 pieces, shaped them into rolls, threw some ice in the bottom of the oven and cooked for them in the of 425F for 20 minutes...absolutely perfect.

You can cut down rising time by using hot tap water instead of cold. Cuts rise tome down to three hours!

Yes..you could go turbo method on this and cut down the rise time considerably. However, my preference is to let this work overnight, ferment a bit for additional flavor.

The texture and crust turned out great, though I still have to improve on the taste. Probably sprinkle a little bit of salt on the surface before baking.

To achieve the fine grind, semola rimacinata is typically milled twice. Curiously enough, despite semolina flour being deemed “pasta flour,” semola rimacinata is rarely used in pasta-making and primarily acts as bread flour.

Einkorn doesn’t have enough or the right gluten for bread. The most I’ve been able to replace into a recipe is about 1/2 cup in a 4 cup recipe.

I need to add this comment because I'm not seeing it on any of the semolina bread recipes. They're semolina and then simola. The difference is simola is semolina, but it's a fine grain where semolina is a little bit more of a coarse grain. So which style is everyone using?

What to use if no Dutch Oven?

You can place a pan like a 9 in pie pan on the very bottom rack of your oven 20 min prior to loading the bread in. As you load the bread pour about 3/4 cup of hot water in the pie pan. The steam will help form the crispy crust. Leave in oven for 35 - 40 min.

You could also make use of an aluminum foil wrap, large enough to let your bread grow, and remove it 25 to 30 min after starting. Uncovered let it bake for another 5 to 10 minutes.
