The Obatzda looks like it could also be used as a 'cheese dip' to be served with crackers. I liked the onion tip (adding freshly minced onion just prior to serving.) I've had onions become bitter in certain dishes, and never realized timing their addition to some recipes is such an important factor. I also like that you suggested the green onions as an alternative. I will try all these various things.

a common way to eat obazda is to take a lye pretzel and just tear a piece of and dip it into the Obatzda.

Cheese is one of my loves! I am thrilled with this and will get to making some so when we make those muffins again we have a wonderful cheese to go with them! Than you so much for the recipes!

Obatzda ist wirklich eine Delikatesse, ich mag ihn sehr herzhaft... Obatzda is best for me when there is at least one strong ripe cheese, maybe red cheese, in it! Thanks for sharing! 👍🏻❤

I think this is a good fairly easy recipe. You explained it well. The laughing Cow soft cheese is easy to find in the United States but if people can’t find it cream cheese probably would substitute and that’s everywhere. I would either use a white onion or the green onions which are mild, I would not use the beer because we just don’t keep it unless I’m making Jewish style brisket. We just don’t drink but I do like wine or alcohol in a sauce. I would have everything soft in my food processor and go with that, I would use Irish butter because I like it better that the ordinary butter produced in the states. I do like paprika and would use 1 tsp. I think this is a beautiful cheese spread and it would be perfect on a sandwich. It would not last long at the house. Thank you for the in-depth explanation. Love this and because you were so thorough it allows me to go fast and get my work done in less time. That’s good thing.

We live in Canada and host international students - all our German girls have been from Munich. They love it when I make pretzels and now this will be the dip :) Great videos and recipes!

When we visited our friends in Bavaria we got turned on to Obatzda. Then when on a business trip to Austin, Texas we were served a buffet of smoked meats and sides that included Bavarian pretzels with “cheese dip”. I commented to the caterer about his cheese dip and he replied that it was his German Oma’s recipe. Es war lecker! As a side note, a lot of people don’t know that there are pretty big German and Czech communities near Austin.

Yes, there is quite a lot of German history between Austin and San Antonio. People constantly tell me to go there ... but I haven't, yet.

Actually, in my city, Muenchen, we use Limburger cheese to make an ‘Obatzda’, but I will try some of your suggestions as a point of experimenting.

To my knowledge both versions are Bavarian. The Limburger cheese is a little too smelly for me ;-) but I like that taste, too.

MyGerman Recipes yes, you are correct about both versions. However, in most beer gardens you will smell the wafting aroma of the Limburger.

I doubt I'll ever prepare this recipe because I have the gastronomical dexterity and appreciation of a dog, but I still like playing this once in a while when I eat cheese.

This sounds like a great way to have your breakfast toast. Maybe skip the onions. . . Or just sprinkle on at the last minute. It would probably make a great omelette, too. I am not a muffin eater, but this sounds super!

Sounds good. However I am from Bavaria (Fuerth) and it is made with Limburger Cheese.

Thank you for sharing. I've made this recipe, with the beer. It is very delicious but really salty. Should I use unsalted butter instead? I actually didn't use any salt in it because I thought it was already too salty.

I never use or even buy salted butter, that is probably why I forget to mention that the butter must be unsalted. We don't use salted butter in Germany.

I have read on a label the use of caraway seeds. (I just bought mine from my local grocery here in Deutschland…do you use that w the paprika? Lastly can I use onion powder - my husband has an dislike for raw onion…. Thank you in advance!

Yes, you can substitute with cream cheese, I will make the taste of the Obatzda milder and some people even prefer it that way.

I use Camembert and Philadelphia Cream Cheese.. A few recipes from Bavaria say to use this.

Yes, that is right. But some people are watching this in Australia and France, Spain or even the Philippines, and I am not sure if they have something like that there. It’s good to have an alternative way to make this cheese.

It depends on in which country you live. People from all over the world are watching my videos and that cheese might not be available in India or Australia or the Phillipines.

Good grief! You do not ever need to use "Left over" cheeses of whatever you can find. . Obatzda is made with Camembert and Cream Cheese. I would never use whatever I have in the fridge.
