An easy, Amish Baked Custard Recipe that will make you feel like you are at Grandma’s house again. Smooth & creamy, with just 6 ingredients.
How to Make Baked Custard
Scald the milk. This means you’ll heat the milk until it reaches 180 degrees, near boiling. Many old recipes call for this process. It is not necessary to scald milk for safety reasons any longer due to the pasteurization process. However, scalded milk does give the custard a little bit of a smoother texture, so I do recommend taking the time to scald the milk. I made the custard both ways and even my non-professional taste testing could tell that the scalded milk custard had a smoother texture. You can scald milk in the microwave or in a heavy-bottomed saucepan over medium heat. You’ll watch for the milk to start steaming and bubbling around the edges. Stir the milk constantly to prevent a film forming on top of the milk. If you don’t have a thermometer to test the temperature, remove the milk from the heat right before it comes to a boil.
Temper the eggs. You have near-boiling scalded milk. You’ll want to pour 1 cup of that milk ever so slowly into the eggs, whisking the entire time. It is so important to drizzle slowly and whisk constantly. If you don’t, you’ll end up with pieces of cooked eggs. Which is not going to make for a creamy custard.
Bake the custard cups in a hot water bath. What does a hot water bath do? It prevents the custard from curdling or cracking. Egg-based desserts need to cook slowly at a low temperature to keep a creamy texture, and the hot water helps to do just that. How do you make a hot water bath? Put a pot of water on the stove over medium heat and bring it to simmering, not a rolling boil. Place the custard cups in a large baking pan with sides that are nearly as tall as the custard cups. Pour the hot water around the custard cups, being careful not to spill any water into the cups. You want the level of the hot water on the outside of the cup to be just at the level of the custard. Oh…and be careful when placing this heavy baking pan into the oven. Don’t let that water spill onto your custard mixture.

I use 6 eggs to 4 cups milk scalded and 2/3 cup sugar. I had almost no bubbles and I took 1/3 third of the hot milk and quickly mixed by hand with a small whisk then I dumped the rest of the milk into the egg mixture. Its not necessary to pour the rest of the milk so slow. Tempering avoids the need to continue pouring so slow. A 1/2 inch of water in the water bath is good. The consistency of mine was perfect. doesn’t need to go 1/2 way up the ramekins. A tip I learned was before putting the milk on the stove, simply rinse the pan with cold water (dont dry it) then pour in the milk and heat slowly to scald. It really cut down the amount of milk that sticks to the pan. 😊. This is such a nice dessert. There is no need for a mixer. Th😮s can also be done in a single 9 x 13 pan inside of a water bath. I also baked mine at 325. Low and slow. Just jiggle for aigns of setting and be certain the centers are not wet. That means they

As a diabetic I used Almond milk. (plus no sugar). The almond milk gave a very very slight almond flavor. It came out perfect.

Exactly as my mom made. She would dump a little leftover rice in to sink to the bottom & we called it rice pudding

I notice recipes vary a lot with the egg to milk ratio. I do 6 eggs and 4c milk.

Absolutely right! I just tried the above recipe and it took 1.5 hours and STILL wasn't done. Too watery, and by the time it cooked through, the top had a skin on it that was dry.

Hi Lizzy. I mean no disrespect but this recipe has WAAAYY too much milk in it. I just tried it, did it EXACTLY as you had demonstrated and it took an hour and a half and still wasn't cooked yet. It was too watery and just didn't work out. I am experienced in the kitchen and this was frustrating. Glad I tried it before making it for guests next week. Your video was so well done, straightforward and it seemed so easy, which is why I decided to try this recipe. . Maybe modify the recipe and make another video.

They did not scald mike in order to pasteurize it. If heating the milk for a few minutes killed germs, baking the milk even with a few eggs would have the same effect. and clearly they were drinking the milk before hand without scalding it, because it would have already been scaled before using it for the custard. Also there is a difference between micro wave and fire. It is amazing that people worry about pasteurization but they don't care about radiation at all.
