When I worked in a kitchen, and my turn came around, I'd make massive frittatas for staff lunch. Throw in all the ends of cheese, some boiled spuds, ham and onion. Basically any odds and ends we couldn't use on the menu. Used up all the restaurant's leftovers and the staff loved them. Everyone fed for the price of a couple of dozen eggs.

I had a dream the other night after watching sorted before bed that I took part in an ultimate battle. We got to choose from a range of pre-packaged desserts and we had to try to level them up whilst still using the original dessert. I got an ice cream sandwich with oreo ice cream. I added coffee to the ice cream, which was a good idea. Next, I fried up some mini chorizo and deglazed the pan with red wine, then added loads of sugar to make a syrupy sauce, and added it all on top of the ice cream sandwich. I dont know what I was thinking. I woke up before voting commenced, but I'm pretty sure I still would've beaten Barry.

I always had trouble with getting the non-egg ingredients into the omelette because using the wet bit of a tomato etc made it far too liquid and more like scrambled eggs, but watching this the penny has finally dropped lol
@annab6726
@annab6726 4 жыл бұрын
Scrape out all the wet seedy part of the tomato and just use the flesh. It shouldn't make the omelette too liquidy then.

I take it out but then eat the wet bits out of a bowl. Using grape tomatoes halved also works because they are much less juicy.

We make Indian-style omelets which are a bit different. We lightly whisk the eggs in a bowl, and add salt, pepper, onions, green chili, tomato, optional garlic right into the bowl with the eggs and mix it all together so all the flavors are incorporated, rather than separate. Then we fry it on the pan, keeping it fairly thin and crispy (not like a frittata), and flip the whole thing over to fry on the other side. Serve it with buttered, toasted bread, heated on the same pan after the omelet is done - my absolute favorite way to have an omelet! :)

One tip I had from a chef in France was to add a small splash of water to the eggs before whisking - it helps keep the omlette really moist and juicy in the middle, especially if going the low and slow method.

Frozen pre-chopped mixed veggies are a lifesaver for me. If you're looking to add more veggies to your quick week meals I highly recommend checking out the freezer section for these bags, really cheap as well. 1KG bags with 5 different veggies are like 2.5 euro's here.

My mum and I love to put shrimp in our omelette whenever we have rice with other dishes! Because they cook really fast, we stir fry the chopped shrimp in olive oil with thinly sliced chilli then add the egg mixture. Sometimes we add chilli oil with dried shrimp into the egg mixture first to spice it up. Really really delicious with rice. It’s more of a side dish, but it adds one to the table.

It all comes down to practice, whenever I try to do it on a flat surface I either hit it to hard and make a mess or to soft and don't crack the shell enough. On the side of the bowl I will get it right the first time without ever getting any eggshells in. Whatever works best for you, right? 🤷‍♀️
