It’s time for another recipe-less cooking Battle, but this time, our ‘normals’, Jamie and Barry, are going head-to-head in making a Swedish Princess Cake! With alternating layers of airy sponge, pastry cream, a thick-domed layer of whipped cream and a smooth, rounded marzipan top, is this challenge going to push them to breaking point? We hope so! @@GarrigKitten It's not a good educational technique because we learn from our OWN mistakes. Watching two people make the same mistake means we've internalized the wrong way much more than the right way. Watching them mess up making recipes they don't know by heart may have a certain entertainment value, but it is not educational.

As a pastry chef from Sweden, I did not expect my Sunday evening being a rollercoaster from curiosity to anxiety to feeling overwhelmingly impressed in fifteen minutes. I would never ever put sugar paste on a Princess Cake - marzipan works just as well for modelling the rose - but other than that: great job guys!

Also, the chefs told them to have 3 layers of sponge. And if you do so, you do sponge - jam - sponge - custard - sponge - cream - marzipan.

GrebbChannel no, the order is actually correct. The sponge on top is to make it easier to cover the dome of cream in the marzipan. Usually the sponge layers are the same thickness though. And you take the top layer, baked side up - jam - bottom layer, baked side down - custard - cream - the middle layer (so you can't see the baked edge near the marzipan) - "crumb coat" of marzipan - marzipan. Thanks to putting the baked/caramelised edges closer to the jam, it gets the impression of not being baked at all. I forgot to flip the sponge on the day's production a couple of weeks back, and there were several customers who asked if I had burned the cake. ^^'

@@FrejaInWonderland I've never made(professionally) or bought one with sponge above the cream. I guess there's no right or wrong way, since princess cake originally don't have raspberry jam either.

As a swede that has made probably around 100 princess cakes in my life, I approve. I'm proud of the boys!. I mean they did everything slightly wrong, but they got there in the end, and I bet they tasted great! I have seen waaay worse looking home baked princess cakes in my days. Also, although I see myself as very experienced at making princess cake, I have NEVER made my own marzipan! I buy the marzipan ready made and already green, and just roll that out, so I am impressed that they did that. I mean it didn't look professional, and the shade of green is all wrong, but impressive nevertheless 👍 All stores in sweden carry all the parts for this cake, so you can just slap it together. The cake, already cut into three layers. Instant custard cream, and pre-rolled green marzipan that you just take out of the package and drape over the cake. That is the most common way for people to make this cake in sweden I think. Also, you can buy the cake finished and decorated in all stores, and also as separate slices. They are EVERYWHERE. That is how common this cake is here. It is kind of crazy, and also a little bit boring sometimes.

@@ColeCorvin I know. It's weird. I mean I love it, it's my favourite cake. But even I think it has gone a little too far. It seems like we are obsessed with this cake. And most of the ones you buy in the stores are pretty boring. It's really only if you buy them from a very good baker, or make it yourself you will understand how good it can be. I understand your problem with marzipan. Even other cakes tend to be covered in marzipan. Sweden must be one of the countries that consume the most marzipan 🙂

they even try to mix it up by changing the type of jam and the color of the marzipan... You know.. because we swedes love our radical changes... Also woe on the poor store who does any of these changes and still call it princess cake... Many fists will be clenched in pockets...

@@omgweirdozz Jag har för mig att originalreceptet faktiskt säger att du ska avsluta med en tårtbotten, och sen liksom "limma" fast marzipanlocket med ett tunt lager grädde. Jag gör det, för tårtan håller ihop bättre när du sen skär den, så det blir snyggare tårtbitar.

Princess cake, but in a different flavour? like same construction, but a flavoured cream pate or maybe bayrische creme, mango or citrus flavor, persipan. and a chocolate sponge maybe? or raspberry chocolate

@@a_lethe_ion I'm not sure exactly what that combination would be called, but if you change too many of the flavours of a Princess Cake it becomes a different cake. We have more than one marsipan covered cake you see.

Just want to put it out there that as a Swede I have never had a cake with the sponge directly underneath the marzipan. The marzipan should lie directly on top of the mound of whipped cream.

The only thing I thought was a bit off was the thickness of the marzipan so it ended up cracking and not fitting the dome shape of the torte. But other than they both did really well lol

I don't know about everyone else but I always get more enjoyment out of the episodes where Baz and Jamie work together rather than battle each other. It's always fun seeing the rivalry but when both of them pitch effort into impressing the chefs it melts my heart 🥺🥺 more co-operation videos!!

Great work, guys! 😃 And here's a Swedish traditional cake fact/superstition for you: if you are single and your slice of cake lands upright on the plate, this means you will be married this year. If the slice lands on its side, you will not be married this year. Both Ben's prinsess-tårta slices were upright on the plate, so expect wedding bells before New Years, Ben! 😁

To be fair Feuille is a really hard word for English speakers to pronounce. Right up there with throat for French speakers (at least here in Canada. they have a bad habit of saying Troath.)

I work as a pastry chef in Sweden and I make at least 70 of these cakes a week and I think you guys did a good job! I also think Jamie is the winner in this one, since his layers were better and the cake had more height to is as Ben sliced it 😁 Well done!

I love this format! It’s awesome seeing Jamie and Baz learning how to make something on the fly and while it’s a competition still being supportive and proud of themselves and each other! Love it! Can you please make an American Pecan Pie with this format, it’s my favorite fall dessert and I would love to see how they do 💙

As a Swede who is a keen baker and worked at a bakery where I saw my boss pump these out at a rate of one each 8 min, I have to say I’m pretty impressed! I mean they aren’t perfect but for a first time they are really not bad. Homemade marzipan is a real Pain to work with and it’s very easy to use too much dye. If I was served one of these homemade cakes at a party I’d be impressed.

As a Swedish pastry chef I think this is brilliant. You never see a not Swedish cooking show acctualy doing the traditional cake, This is exactly how we do it, and my vote is Barry. The shape is often the hard thing to get right and he did it better. And the sponge should be that thin and nice to not steal the show in this cake. Well done!

Just an fyi, classic princess cakes dont have jam. Opera cakes do though but they also have pink instead of green marzipan.

@David Håkansson that's incorrect. Jam in princess cakes are a modern twist. Classically they do not have jam. So no, they in fact do not always have jam.

Loved this, my mum is from Sweden and I got a prinsesstårta for my 18th birthday. It is delicious and one of my favourite cakes. I remember when they did this on bake off and my mum got annoyed because most swedes know how hard it is to make and so do the sensible thing and buy one from a bakery. Fun fact: This cake was invented by Jenny Åkerström for the daughters of Prince Carl of Sweden and is named in their honour as they loved it so much.

It's because the challenge is 'recipe-less', not 'think like a chef'. That's why the barrier wasn't there.

You know what I appreciate about this? The fact that, while they did mess up their recipe, they DID both ended up with a wonderful end result. Just because not everything does not go your way does not mean that the end result will be a failiure.
