Oh, yummy! I first learned about gumbo as a child when I watched 'Princess and the Frog' in theaters. Years later, as a college freshman, I was given the opportunity to go down South for a field trip for one of my college course assignments during spring break of that year. It was my first time down in the Southern U.S.. I went with my professor and my classmates. I remember we did stop in New Orleans and I had the gumbo there. It was delicious! I was so afraid it wasn't gonna taste good, but I'm glad I was wrong. I would make my own stock out of crabs, but I can't make it as my mom has a shellfish allergy.

Very well done! Techniques and advice are exactly right. I grew up in New Orleans, and now I live in Paris, France.. Gumbo has been a great way to remind myself of the taste of home since the pandemic hit. I usually go for chicken and sausage gumbo (rather hard to find Gulf Coast Blue Crab here). But we do have Okra. I cannot stress this enough - make your own stock! For gumbo yaya, just roast a whole chicken then throw in the bones and whatever's left from the chicken with some veggie scraps and seasoning. Then proceed exactly as the video says. Roux, Trinity, seasoning, stock, sausage and chicken. So good, I've never seen someone have only ONE bowl.

one of the most simple "Gumbo" in germany and austria is called Brennersuppe, translated into burned soup if you will. You just do an extra thick roux and season it with vinegar. Thats it. From there you can go and add more ingredients if you want, but plane flour and vinegar is a hundrets of years old recipe in rural areas

I LOVE this video, and I love the narrator (Chef Kenneth or Chef Will?) here. Anthony Bourdain said that New Orleans is the most important city for American cuisine. He's 100% right. It's also the ONLY place in the World where you can get this kinds of food at this level. I've had other gumbos and soft-shell crab jumbalayas in the North, and it was AWFUL. Back in January 2020, I was in NOLA for work with many co-workers. I didn't have one bad bite of food my entire 5 days down there. It was amazing.

Once you taste it, love takes on a whole new meaning! My first taste of gumbo was in my teen years at a little tiny shack restaurant in New Orleans. It was also a history lesson for me as the elderly lady who cooked the gumbo was finishing for the day and felt compelled (her words) to sit with us and explain the soul of what we were eating! That has been over 40 years ago and I have never had gumbo that good again even in New Orleans. I have also never forgotten the lessons that beautiful soul who made that gumbo taught this young white girl!!! I don’t know if she ever realized how profoundly she touched my life (probably did, but I never got the chance to tell her as I didn’t realize it myself until later in my life). All over a bowl of gumbo! I hope you get to experience that!

The origin of the gumbo soup comes from West Africa. We called it Okra soup in Africa. The African Americans and African Brazilians have made their own adjustments from generation to generation based on the ingredients available to them. Afro Brazilians are very proud of their African origin, however when it comes to some African Americans this is a different story. I heard some of them saying their ancestors never came from Africa but they were linked to the native Americans. The level of ignorance is beyond anything imaginable. I am from Africa but if I was an Afro American, I would have wanted to go back to Africa and discover my true roots.
