Let's face it. The ultimate moka pot brewing technique should give you a smooth tasting brew with that beautiful regulated crema flowing out of your moka pot into the cup! Just like what you would expect out of espresso from an espresso machine. Except this time at a fraction of the cost of an espresso machine.
With a few tweaks in the brewing technique and adding this crema valve, you might just get those perfect 'shots' using your affordable moka pots. I also found that using the valve eliminates the need for paper filter.
This handmade crema valve was invented by a gentleman from the South of Thailand. If you would like to give it a try, links to order are below:
This crema valve is only available in Thailand #daypressomachioni

MOKA POT CREMA VALVE
For use with Moka Pots 1-6 cups. Best used with 3-cup moka pots
Directions for use:
• Insert the valve in the stem of the coffee collector (pot)
• Put firmly in place
• Place the filter plate then the rubber gasket
• Brew as normal
• To take out, tap out or push out through the funnel using a soft toothpick or wire.
Recommended Brewing Proportions
Fill the coffee basket with medium to fine grind coffee depending on the roast.
Fill the boiler with water up to just below the pressure valve.
For gas burners: brew on medium heat and reduce the heat when the coffee starts to flow out.
For electric hot plates: brew on high heat, reduce the heat after 1 minute or so, then turn off the heat as soon as the coffee starts to flow out.
Cleaning Directions: Rinse with water and keep dry.
Materials: Stainless Steel, Rubber Rings

I use the paper filters which do a good job of giving some crema. Don’t forget this is not espresso! The crema is short lived, but i can say that the paper filter does help the coffee texture. Maybe this valve helps too? I think the technique in this video is very good in getting a better tasting cafe. I usually let my moka get too hot on the flame which makes the coffee more bitter. This makes a bigger difference in how good the coffee turns out if you pull it off the flame earlier. Thanks for sharing!

You simply have to tap it out. TBH, using a paper filter would achieve an equally good brew
@francochan
@francochan Жыл бұрын
@@rizasri really? What do you mean by “equally good brew”? you mean, using a paper filter will achieve the crema this valve offers? I don’t think so. I’ve tried adding a paper filter to my 3 cup moka pot and the result is the same. No matter the grind size. But what I want to know is, once you plug the tube/shaft with that Thai-invented gasket/valve, how does one remove it? Those rubber/silicon o-rings look pretty tight, and one would worry that once it’s jammed inside tightly, it will be close to impossible to remove. Does it come with a tool to remove it easily?

@@francochanIf you want crema, buy an espresso machine. Trying to force crema out of a moka pot will only result in poor tasting coffee.
@francochan
@francochan 5 ай бұрын
@@kiyoponnn first of all, I feel like I ought to wish you a Merry Christmas as of all the days of the year, you’d rather spend it taking some of us here in the comments section to task than spread some positive cheer. Second, maybe shy away from any assumptions about people you may not know. Why do I say this? Because: 1. I do have espresso machine, and I do enjoy true crema, among other things that an espresso machine delivers. And; 2. I also own a moka pot, and have owned one for many years, and respect it’s Italian heritage in coffee making, as well as its design simplicity in being able to deliver good coffee in such a small package. To address your pointed query, some may not have the option to get an espresso machine due to budget or space constraints, in which case, a moka pot (like generations of Italians can attest to) serves as a smaller, portable, more economical and accessible way to obtain someone’s espresso, with only a stovetop burner needed.
@francochan
@francochan 5 ай бұрын
@@kiyoponnn Also, precisely, most of the people who have watched and appreciate this video are intrigued by this easy attachment that adds a further extra bit of pressure to any moka pot in the cupboard. I have since purchased one of these, but before I share my own observations, I just want to preface it with this: I am aware that moka pots do not technically create true pressurized crema, they can create a sort of micro-foam residue that closely resembles it in limited amounts and in varying degrees - a “faux crema”, if you will. Now, what this “spout cap” invention does create however, is simply a higher, more frequent occurrence of this “faux crema”, by bringing the standard top spout of any moka pot to an efficiency of a Bialetti Brikka moka pot, which has a similar “spout cap” that increases the pressure just a little bit more to create “faux crema” for those seeking it in their moka pot brews.

@@rizasri Let’s say I want to make an 12 oz Americano; do I have to put less water in the chamber if I want it to act like an espresso? How many shots does a 3 cup moka pot yield?
@bm-br3go
@bm-br3go Жыл бұрын
@Homme Field In a 3 cup Bialetti, if you fill the base with 130g of water you can usually get 85g - 95g of brewed coffee out with proper temperature regulation. This is around 3oz of coffee. Making a moka americano, I would use between a 1:1 to 1:2 ratio of brewed coffee to hot water. Ultimately the ratio is up to you, but I start losing complexity above 1:2. So at most your americano will be likely be around 9oz. Use the max amount of water and a full basket of coffee each time. Keep in mind that the less water you use, the more steam you need to generate to begin brewing (which usually means a hotter brew temperature). Moka pots are such sensitive brewers that aiming for specific results is pretty tough unless you are unreasonably consistent.

Please don't follow this types of videos. Follow the videos of bialetti and illy. You have to use it fresh water just beacuse when you put the moka on the stove the water will boil at 100 celsius degree and then the coffee will start to come out. The moka preparation is not for crema but just for an espresso size coffee, if you want a crema espresso you have to use an espresso machine cause the extraction pressure is much much higher, for example 8 bar, that the about 1.1 bar of the extraction with the moka. The moka brand will not affect your coffee taste, but how much you will use it the moka in the future because the first 3/4 coffee you have to throw it in the garbage. Then using the moka frequently will change the colour of the gasket and the taste improves. In Italy we use Bialetti just beacuse is an Italian brand, it makes beatiful and well constructed moka, and you find replacement parts easily.

@LenKirin
@LenKirin 3 ай бұрын
Already misinforming. The water is pressurized; it's boiling past 100C. 9 bar extraction for espresso, not 8. Also, fresh water takes longer to heat up; conductive heat transfer thru the pot itself will burn your coffee before then from the heat source. I agree that these types of videos aren't the best; they misinform as well, but don't spread misinformation to beat out other misinformation.
