I made these last night for my family and our wonderful neighbors who gave us many pounds of persimmons out of their garden. Wow! These were SO SO good! Thanks, Angel! Our neighbors really liked them, especially the jam filling. Thanks again and Happy New Year! :)

Very pretty and, I'm sure, delectable cookies. I think it's important to note that only the kaki variety of persimmons can be eaten while firm. The hachiya variety cannot be eaten until very soft. But my children prefer both to be soft so they're like nature's fruit preserves or custard. They're native to many places, including North America, but are not as readily available as the Asian varieties and not as convenient as the seeds are much more prominent.

Yes, the kaki at our house is very astringent if you do not wait until it is super soft. It's so nice to see someone else call them kaki!

I just tried these and they are beyond amazing. I'm wondering how this would taste with a shortbread or butter cookie dough? Hmmm...maybe I will try it with you pineapple cake dough. Yum!

+Calla Lo They should last 4-5 days if stored in a cool dry container, but you may not have that problem since every time I make these, they get eaten up quickly. :D

+Sharon Ngo Check to see if the almond powder you have on hand is not already almond flour. If it's the almond powder used for Asian drinks, then no that's not the same. Costco sells almond flour (if you live near one and have a membership) and most grocery stores will sell it as well.

I enjoy your videos, thank you for sharing them! :-) One comment: I noticed when you said to sift the dry ingredients, you just stirred them together on camera, rather than sifted them with a sifter or sieve. Do you usually sift, or just stir together like you did on camera? :-) Thank u

+S Ooi I actually sifted & measured before I put them into the bowl. Then mix the dry ingredients before adding the wet ingredients. :)

I never knew they were called persimmons. My grandpa introduced them to me when i was 7 but i thought it was called Sharon fruit. Also he said its bad if you eat them unless they are very ripe.
