True story...I had a buddy catch some grief for featuring a lovely cucumber for only a few seconds in a long, drawn out video. Just a few seconds out of that horrific mess, and that viewer decided to attack those short seconds of cucumber love. I felt bad for the fellow. He had spent so much time on his garden, and someone verbally abused him on line! On line....can you believe the audacity?? Anyway, in a show of support, I made a long, drawn out video and tried to ram as many firm innuendos in as I could. I'll do better next year, I have been playing with my cuc's and will be nuanced in the future.

Great video. My husband loves crunchy, salty, vinegary hot cucumber pickles (Lebanese style). I am in the kitchen using your video right now. Two questions stopped me dead in my tracks: 1) The amount of salt: two tablespoons per cup of water (at 4:50) or two tablespoons per liter of water (after the math - at 5:15)? I went with the second one. Doing the math, I get a little less than 1 1/2 teaspoons per cup. First one is deadly salty! 2) Bayleaf tip: does the bay leaf alter the taste? I added one Serrano pepper per cup of water. No dill. That turns the recipe into Lebanese style. But I get the crunchiness from you!

Hello friend! I really did not make that clear, and I am sorry. I use 2 tbs per litre of water! Your instincts are great, lol!! I did not find it altered the taste from the years before, and if it does, oak leaf or grape leaf can be used. So similar I know I would love yours:)))

@@Mrsnufleupagus It helps lower the pH and it gave some antibacterial functions. It also help grow good bacteria and microorganisms for the shrimp and baby fish to eat. It's mostly cherry shrimp in diffrent color for now. Neocaridina type. But I will start with Caradina types soon.

I've read that you can re-use the vinegar brine. I'd feel comfortable doing that with homemade brine, but would be less so with store bought.

Does anyone know why Vlasic is now selling 16 oz of Polish dill spears in a 24 oz jar ??? The first thing I do when I open a bottle of spears is to put them in a much more narrow 16 oz jar. I have noticed recently that when I do this now, there are no extra pickles left over in the larger jar. Why are they still selling these pickles in a much larger jar than they need ? I don't need all this extra pickle juice. The jar is literally 50% bigger than it needs to be and is also annoying to try and fit in our refrigerator door. WRZ 2021-08-08

Someone else raised an issue I hadn't thought about until today. The Vlasic label continues to list these pickles as "24 Fluid ounces" as they always have, which is very deceptive. So it's impossible for consumers to know they have greatly decreased the contents of these jars by just looking at the label. Only someone like me who has been consistently putting the contents into a 16 oz condiments jar would notice. Most of the time, when the contents of a package is decreased that is usually reflected on the label but Vlasic doesn't bother to do that. WRZ 2021-08-09

For hot canning yes, fermentation no.

A little dirt never hurt great, so if I just want to ferment, can I leave them in the brine submerged at room temperature? Right. Ow it is about 65 degrees around the house.

Hey buddy, absolutely you can!! I pickle carrots with the same recipe, I just skip all the other tips as they never get soft in the jar! Far easier than cuc's, actually:))

Most detailed vid in my search yet, THANK YOU!!!! Questions- 1. Are those standard cucumbers? 2. How long did u leave them in the salt to drain before rinsing? 3. Did u heat-up ur jars before adding the cucumbers, then into the water bath? Wouldn’t that shatter the glass? Thanks so much. Looking forward to making these today! Appreciate you!!!!!!

1- Any cucs can be pickled, not sure of the variety on these 2- salt for a half hour then drain 3- I sanitize my jars in the oven so they are not cold when they go in the bath, and the boiling brine warms them as well 4- thanks for the questions, hope you make some \awesome pickles:))

Great video! Question… how do you keep your jars from the bottom busting out with the temp changing from cold pickles, hot brine, and then hot canning water? I used your technique, luckily only one jar busted… but that’s one too many 😂😂. Maybe let the jars get back to room temp and place in water before it gets boiling to process? 🤷🏼♀️ Any insight appreciated ☺️

When I can, I will have a few jars burst regardless of cold cucs. They aren't frozen nor is the jar so I'd assume that was just a weak jar. For the hot bath they need to be placed in boiling water. Always have a rack in your canning bath so the kars don't rattle. I don't think you did anything wrong my friend:))

QUESTION !.......How can you ferment cucumbers using vinegar in the brine?........My mom made home made pickles using plain water, spices and cukes......They say no vinegar..?......

Answer.... you can't ferment with vinegar, then it would be called pickling. Fermenting is done by using 2% weight veg to salt, which is often mixed with water to make a brine. The salt starts the fermentation process and after a month or so....fermented pickles!!

I use non iodized salt...pickling salt. Leave them for 20-30 minutes and then drain.

My concern is that they would get slimy. Even in soups it's recommended the bay leaves be dry.

Absolutely friend, that would be a quick refrigerator pickle. They are awesome after 3 days! The only draw back, if it is one, is that they don't store for many months. But....I've never know refridge pickles lasting that long:)))

@@jennprescott2757 Incredibly odd Jenn....not sure if they were close to soft already. I have never had that happen. When I use small pickling cucs, and the skin is on, you really don't have to salt them as they aren't big enough to have a super high moisture content. Perhaps try again and don't salt them....the other steps I would still do.

Why does the ball canning book tell you to soak your cucumbers in salt water for 24 hours ?? I'm new at canning but definitely trying this next time. 😉❤

The salt will remove extra water from the cuc, making it crispier. 😊😊

Why does everyone use those types of lids? Can regular lids be used like the ones that store bought pickles use?

Those lids are used because they ensure a proper seal, which means avoiding deadly bacteria issues. You can try....but seems a bit risky to me for the low cost of the proper lids:)
