Dropping the video early today! Love me some burnt ends. These are middle class burnt ends though. Poor mans burnt ends are hot dogs cut up and smoked with bbq sauce. My boys love those. Need to find an all natural hot dog though. Some brands are too salty with the preservatives they put it. When we find a good chick on sale, we’ll pick it up and to that.

I just discovered your videos and love your presentation and technique. I personally don;t like sugar or sweet tastes on my meat/ham/chicken/fish, can I cook and wrap this and cook longer in paper for more tenderness or do you need to sauce it to finish it? Mustard sauce, Mushroom, wine, peppercorn?

Great video and recipe! I tried this and the result was great except one part. After reaching 165F and wrapping the meat I can’t get the meat temperature up to 195F even close to the time you show in your video. I reached 185F after about 2-1/2 hours and gave up (I was getting hungry). I don’t have your fancy grill but the temperature on mine is set to 275F. Any suggestions? Other than buying your brand grill, of course. I’m financially challenged.

Indeed it does. In most cases you aren't buying the same amount of raw weight as a brisket so it is less money spent. But you are absolutely right, it is more per pound.

In many places chuck roast is cheaper, smaller cuts available, and more meat per pound
