So typically we long cook a pork shoulder to break down the connective tissue. Even though these are cooked quick and to a low temp, its wild they can still be tender. Looks delicious.

Yeah, it's surprising how tender it is without the long cook. Interestingly, the key is to not overcook it, or it will get tough, before it would eventually get tender again if you cook it all day. :) Thanks for stopping by!
